This salad recipe is adapted from the book “Maae Khruaa Huaa Bpaa” (แม่ครัวหัวป่าก์), published in 1971 as a memorial for Jao Jaawm Phit (เจ้าจอมพิศว์). Jao Jaawm Phit was the daughter of Thanpuying (Lady) Plean Passakornrawong, who was a pioneer of noble Thai cuisine.

Sweet Pounded Unripe Rice Flakes Cereal - Rice harvesting takes place only once a year, and there are only two weeks where the ripening grains are suitable for producing Khao Mao. Khao Mao doesn't age well, it gets dry and tough quickly. The-once-vivid beautiful green color that portrayed the essence of its immaturity and the beginning of the rice harvesting season, slowly fades away, along with its bread like scent.

Our ancestors, the early humans, had to base their food selection only on their senses. Sweet was energy, umami indicated the presence of proteins and saltiness was the sign for the much needed minerals. Generally, they avoided sour taste because it represented rotten or spoiled food, and bitter was the taste tonics and remedies were made of, and yes, it is now confirmed that bitter gourds are good for you.

Yam sohm choon is a sour green mango salad served with grilled fermented shrimp paste; roughly chopped shallots; sweet pork condiment, deep-fried fluffy grilled catfish and seasoned with fish sauce, palm sugar and lime juice and topped with deep-fried dry chilies cut into small pieces. If you follow Thai movies and TV dramas, you probably remember Sohm Choon, the adorable boy ghost character from the period romance movie Reun Mayura (1997), which was a love story between a beautiful woman and a handsome man living in different periods of time.

Gai dtai naam, which means “under water chicken” in Thai, consists of braised chicken in a coarse, aromatic paste made from lemongrass, galangal, garlic, chilies, kaffir lime leaves, holy basil, coriander and spring onions. In the home-cooked dish popular among the Thai working class, the entire chicken - including the bones - is chopped into bite-size pieces, and served with a bottle of rice wine accompanied by local country-style music (luktung) at high volume.

For the khanohm jeen saao naam version that we present today, we turn again to the writing of Thanpuying (Lady) Gleep Mahithaawn for her unique take on the dish. Her version is quite similar to the common recipe encountered nowadays, but Lady Gleep enhances it with more ingredients, elevating the dish yet another notch to the level of a majestic masterpiece.

This recipe would probably change your perception about the term "salad", maybe because its dressing has a multi layered, curry-like personality, rather than the common sour vinaigrette-like dressing, or maybe because it takes some good few hours to prepare, somewhat longer than simply opening a bag of hydroponic greens. This salad is the fruit of the dedication of court ladies from aristocratic households, that for centuries perfected and elaborated on the art of cooking through detailed and calculated process, to create sophisticated dishes that are not only delicious but also very healthy and visually pleasing. These ladies made a very large commitment for small things, and they attended all their time and efforts to make minor things better and getting the small things just right.
The Ambassador’s House Style Noodle Soup (หมี่น้ำบ้านราชทูต; Mee Naam Baan Raat Thuut)
This soup dish features crispy rice vermicelli noodles, a chicken broth that has a three-flavor profile infused with the aroma of bitter orange, and a plethora of other ingredients such as crispy fried tofu, chicken, pork, crab and pickled garlic. In Thai, the phrase mee naam baan raat thuut refers to a rice vermicelli noodle soup in the style of the Ambassador’s house. The dish was not new when it appeared in the 1956 book Snacks, Tea Nibbles, Hors D’oeuvres and Drinking Food (ตำราอาหารว่าง - เครื่องน้ำชา และ เครื่องเคี้ยว หรือ กับแกล้ม) by Jeeb Bunnag (จีบ บุนนาค), as noodle dishes were often the preferred ingredient for light meals or snacks. In Grandparents Recipes: 100 Years Old Recipes (จานอร่อยจากปู่ย่า สูตรโบราณ 100 ปี), a volume printed in 2014 that highlights recipes from the kitchens of fifteen prominent families, a similar version of the dish is referred to as mee naam baan bpaak naai leert (หมี่น้ำบ้านปาร์คนายเลิศ) and is associated with Nai Lert.

In 1833 Prince Mongkut, who later became King Rama IV, found a square stone inscription, known today as “The Ramkhamheang’s Inscription”, believed to be written 541 years earlier, in 1292, by King Ramkhamheang - the third king of The Sukhothai Dynasty (1279-1298). In this inscription King Ramkhamheang tells the story of the Sukhothai regime; He includes details of the systems of law and describes how he ruled the people wisely, in a kind and personal, like father and son manner. King Ramkhamheang – (who was an outstanding warrior, statesman, scholar and diplomat who expanded his control from the Khmer kingdom of Angkor in the east, through much of what is today central and southern Thailand, to northern parts of Laos and Burma) – gives a picture of his kingdom as idyllic and free of constrains.

Gaaeng raawn (แกงร้อน) is a colloquial Thai term that refers to ‘hot curry’. Today, gaaeng raawn is used to denote soups or curries served with steamed rice. While the precise origin of the term is unclear, gaaeng raawn (แกงร้อน) was deployed in the 1800s for a specific dish – a Siamese soup featuring glass noodles, cooked as either a coconut or a water-based soup with an assortment of dry ingredients revered in Chinese cuisine. The soup’s potential health benefits, combined with its ease of preparation and subtle yet profound flavor, made it a popular choice for entertaining large groups of people, of all ages and backgrounds. The soup is often augmented with fresh proteins: in its more luxurious versions, multiple proteins may be added, including a combination of chicken, pork, shrimp, squid, and crab meat. Thus, over the years, gaaeng raawn (แกงร้อน) was established as a staple source of comfort and warmth for people of all walks of life in Siamese society.

One of the charms of street food is that it finds you rather than you finding it. Therefore you are usually in the perfect mood to embrace it. This treat along with other sweets are traditionally presented on tricycle drawn trays that are protected from insects and pollution by a transparent nylon tent and light up by a single light bulb.

Dtom Jeaw Pla is a rustic and spicy fish soup that is far from being unsophisticated. There is something humble, genuine, and unpretentious about it, which makes you fall in love with it. Its humble countryside charm and surfeit of tastes quickly placed it high on my personal list of favorite dishes. The fresh essence of fish cooked to perfection melds with the earthy tones of the grilled ingredients, the eggplants, shallots, chilies and garlic. It has a heavenly silky broth with a scent of lemongrass, which is generously lifted up by a handful of fresh herbs, lemon basil, saw coriander and spring onions.

An Ancient Siamese Recipe for Tom Kha Pet (1890 AD) Duck Simmered in Light Coconut Cream and Young Galangal, and Served with Sour-Sweet Roasted Chili Jam

Tom kha is a well-known and much-loved Thai soup: a creamy, soothing coconut blend, a warm, silky broth in which chicken, mainly, is simmered with young galangal, mushrooms, and, at times, charred-grilled banana blossoms. In other versions, lemongrass and kaffir lime leaves are added, blurring the boundaries between tom kha and the coconut-based tom yam soup (tom yum kati; ต้มยำกะทิ). However, in the late 19th century, tom kha was not a soup at all: it was a dish of chicken or duck simmered in a light coconut broth with a generous amount of galangal. The coconut broth added sweetness to the meat, and the galangal helped to mellow the meat odor. It was then served with a basic roasted chili jam as a dipping relish seasoned along the salty-sour-sweet spectrum.

It is believed that this dish was introduced to the Siamese royal cuisine in the middle of the seventeenth century by Portuguese traders. Later, along with other egg yolk-based golden sweets like the golden drops (thong yot ทองหยอด), golden flowers (thong yip ทองหยิบ) and golden threads (foi thong ฝอยทอง), these royal desserts were passed to commoners outside the court. For the marzipan filling I am using, beside the mung beans, both the flesh and the water of fragrant young coconuts. It gives a rich, sweet and almost nutty flavor which works perfectly with the silky texture of the mung beans and the creamy golden egg yolks coating.
