Cooking with Hanuman at Three Trees was a wonderful experience. I found his depth of knowledge and how willing he is to share his work hugely inspiring. Hanuman brings a deep sense of history with every dish and concept. The way he visualizes recipe and process has changed the way I approach cooking. Through his thoughtful methods, I was able to understand and articulate what I tasted and when I was tasting it. Additionally, I was able to learn the historical context of each dish we made. This ultimately led to answering “why”. Why are we making these decisions in the kitchen? When one has the answer to why, and understands the how (via technique, ingredients, etc.), there is no longer guesswork. You are left with informed decisions regarding process and flavor. This is my most important take away from my time with Hanuman. My only regret is not being able to stay longer!

His way of teaching has given me a different eye when approaching Thai cuisine repertoires and gave me methods in applying these concepts in my own creations.

Above all, spending time with Hanuman at the beautiful Three Trees estate was such a blessing. His kind nature and wisdom made me felt like we’ve known each other for a long time. Moreover, the garden of thai herbs and vegetables, the house and kitchen looking out into the green landscape, the friendliest team that made everything run seamlessly, all made my experience unforgettable and I will for sure be coming back no doubt.

I recently moved to Thailand from the United States. I am a home cook (for now), although I have known I wanted to become more familiar with Thai cuisine for the last couple of years. Our recent move to Bangkok has really solidified my interest in Thai cuisine.

Because I’ve had no professional experience in a kitchen, I did not exactly know what I was getting into by signing up for a 12 day professional course at Three Trees. However, I had been following Hanuman’s work for several months leading up to our move to Thailand and was interested in giving it a try. Thank you for all your teachings, I learned beyond what I was expecting, not just about Thai food, but concepts and theories that were also applicable in all my cooking. Two years later today, I still think of all the things I have learned, hoping that I am more mindful when I cook, to think about the hows and whys, the layering of flavors, the ratio of ingredients, to tame certain flavors and how to harness the umami.

Hanuman had also cracked the code for Thai curry paste for me. Up until I was studying with Hanuman, I was always one of those cooks that followed the recipe religiously when it comes to curry paste. Weeks into his intensive course, I was able to make a basic curry paste without looking at a recipe by following his formula. It was a revelation to me, and I don't think I have read or heard of it anywhere else.

I've been living in Thailand for several years, and one of my goals since moving here was to get a deep understanding of Thai food, and to learn how to create dishes that represent the complex flavors of Thai cuisine. Hanuman is an excellent teacher. He knows more about Thai food and its history than just about anyone, and he does a great job of imparting that knowledge to his students. He doesn't just teach you to follow a recipe. He teaches you how to think about flavors and how to create a dish in the way you imagine it to be. I studied with him for five days. During that time I learned the ins and outs of making curry pastes, how to think about seasoning dishes, how to select the right dry and fresh chiles, how to use ingredients that I'd never even heard of before, and much more. Hanuman was always helpful. Five days was enough to get a good overview and be able to go home and try out my new skills. I hope I can go back again to study with Hanuman. I'm just an enthusiast but I can see how chefs could spend 12+ days studying with him. I highly recommend the classes.

It’s tricky to recount my time with Hanumanr without veering into sensationalism. If I do it’s only because the experience imprinted on me so.⁣

I’ve seen numerous people go to his farm in Chiang Mai and describe their time there as ‘mind-blowing’, ‘seminal’, or ‘ground-breaking.’ And these aren’t random punters like me, these are Michelin-star chefs, food writers, restaurant owners and the like.⁣

So going into two days at the farm, I couldn’t help but have dangerously high expectations. High as they were, what I learnt- or better still - what I came to understand during my time there exceeded anything I hoped for.⁣

In essence, I went in expecting I would learn some solid principles to apply to my cooking. But over two days, through an eclectic mix of philosophy, spirituality, science, history and tradition Hanuman taught us a new model for thinking about and cooking Thai dishes; a model that is paradoxically, as abstract as it is pragmatic.⁣

For a more practical take on things, I feel like I have walked away with two significant takeaways. Firstly, I’m confident I could go out and cook any number of traditional curries without having to even glance at a recipe. But much more importantly I feel I have the tools to start being the author of my own recipes; to have the knowledge and conviction to create beautiful Thai dishes that are in a way uniquely mine.⁣

Everyday was just an incredible experience of new flavours and techniques and a unique approach to cooking in general which I believe can and should be applied to other styles and cuisines.

Not only was the course great but his recommendation of staying up in the hills close to the farm was most certainly worth it, as it was so peaceful and really allowed me to appreciate the nature and fully focus on my day to day learning.

Through researching Lao recipes online, I fortuitously stumbled upon Hanuman's website and learned about Three Trees Doi Saket. As a social scientist who also happens to love cooking, and who spent part of their life growing up in Thailand, I found Hanuman's research and writing on the cuisines of this part of the world to be fascinating and in depth. Not only did the recipes look beautiful, but they were so thoughtfully researched.

Finally - after lifting of travel restrictions - I recently had the opportunity to immerse myself in five days of cooking with Hanuman. The experience was everything I hoped for and more. Hanuman curated a class for my interests and level of experience - having read that he works with many professional chefs, I was not sure what to expect but the level engagement was comfortably tailored. Hanuman is generous with his knowledge. I spent five days learning about the art, science, history and culture of Thai food and flavour in general - each recipe we reviewed before cooking felt like an archaeological dig in and of itself. Perhaps most importantly, we created some mind blowingly delicious dishes.

Learning with Hanuman, I feel I have a better sense not just of the architecture of things such as Thai curries, but I also feel I can reflect upon his approaches to help create more complex flavour profiles in dishes more generally.

On top of this, Three Trees is just a stunning place to learn. Hanuman's staff are a joy and I love his dogs. I stayed in the village of Doi Saket at the recommended resort nearby - it felt like a luxury to be in a place with poor internet and mainly just switch off from the rest of the world in the early mornings and evenings.

If you want to learn more about Thai food and about how to be a better chef in general, I couldn't recommend this place more. I hope to come back regularly as I believe the learning could be endless. I feel privileged to have had entry to a little slice of this special place. Thank you to Hanuman and the staff at Three Trees Doi Saket.

My wife and I spent a day at Three Trees Doi Saket as part of our honeymoon. We cook a lot of Thai food for friends and family at home, but wanted to be able to understand and get under the bonnet of Thai food, in order to be able to fix issues and exercise our own creativity. Hanuman helped us to do just that. The first part of the day, inclusive of graphs and chalk-board sketches, will stick with us for a long time. Even in just one day, we could start to think about the construction of flavour in dishes we make and eat, the choices which are made, and how to either replicate or amend them. This was not only fascinating in itself and for our future cooking, but added so much value to the final week of our honeymoon, where we ate in some incredible restaurants in Bangkok. To be able to taste and discuss the dishes meaningfully - beyond "this is delicious" - gave a whole new dimension to eating in quality Thai restaurants.

In terms of the practical part of the course, Hanuman and his team were a joy to work with - as were the stunning local ingredients. For the one-day course for an amateur couple such as us, I would describe it as almost a cross between a cooking school and a 'chef's table' experience. We made the dishes ourselves with instruction and feedback throughout, and tasted the dishes together as we went along. But then in the final few moments we would be sat down and Hanuman would plate our (by now delicious) food with the care and attention worthy of a restaurant. It therefore felt like not only a great learning experience, but also a real treat befitting of a honeymoon. That said, it also certainly whetted the appetite to come back one day and spend longer under Hanuman's tutelage , if and when I decide to make the jump and make Thai food more than just a hobby

Four days of practicing curry paste making (pounding, pounding, and pounding… ) may not sound great on paper, but learning how to utilize the basic knowledge learned from Hanuman makes it so much fun.

Before coming to Three Trees Doi Saket, I knew how to research Thai recipes and make them step by step. What I learned by working with Hanuman is how to execute these recipes for traditional curries without even looking at the ingredients list. Now I know how to adjust the seasonings perfectly every time and create new aromatic identities in my future dishes.

Most importantly, with the fundamentals I gained during the course, I can start creating my own recipes, which was very important to me before coming to Thailand.

I only got to spend one day with Hanuman at Three Trees Doi Saket and it was a huge eye opening moment for me. Hanuman is an excellent teacher and to experience his knowledge and skills was fantastic. Even though we just scratched the surface I learnt so much about the approach to food, flavours and recipes. It’s something I will take with me when cooking any type of food, not just Thai food. I will definitely be back, but for longer next time!

If I had to sum up my time at Three Trees with Hanuman in one word, it would be reinvigorating. Having been classically trained in Thai cuisine, there were a lot of things that I thought I knew.
