As a lifelong cook, chef, and food writer, I cannot say enough about my experience at Three Trees Farm. Each morning we would sit, discuss the background of the dishes we were to prepare that day, and learn how those recipes and ingredients fit into the historical and cultural context of the region. We would then spend the day cooking spectacularly delicious food in the farm’s immaculate, commercial-grade kitchen.
Cooking with Hanuman was a pleasure. He takes the time to understand how comfortable you are in the kitchen and tailors his instruction to your comfort level. You cook the dishes together, learning about ingredients and techniques as his patient hand guides and teaches along the way.

Picture this. A small farm somewhere in the country side near Doi Saket, a former surgeon turned Thai food scholar who has been living here since the 80’s and has a passion and knowledge on the nuances of Thai cuisine beyond anyone you are ever likely to meet. I was expecting the workshop to be excellent yet it has blown my mind completely.

Cooking with Hanuman at Three Trees was a wonderful experience. I found his depth of knowledge and how willing he is to share his work hugely inspiring. Also, the lightness of the touch with which he is able to explain his thinking on the order of flavours and styles of regions of Thai food made some complex ideas feel very natural and effortless to pick up. Hanuman’s approach has fundamentally altered how I think about Thai food, what i look for in it’s deliciousness and given me direction what I want our cooking to able to achieve in the future. I truly hope that one day Hanuman has the time to write a book on Thai food as it would be essential to anyone looking to improve their feel and knowledge for the cuisine. For me, this was one of a few seminal moment in my life in cooking and I can really pay no higher compliment than that.
Yesterday we had the pleasure to cook with Hanuman Aspler on his farm, a serene expanse of green space hugged by valleys of the mountains in Doi Saket. The sun was out and we smoked catfish, we drank tea at his rustic yet simple table and discussed food before being introduced to his kitchen. In the distance, dark moody clouds slowly rolled in, and aside from us, and the sounds of wildlife, was the only additional presence to our private cooking lesson. By the afternoon the rain fell, the rumbles surrounded us as we took in Hanuman’s wisdom, humour, kindness and thought. I’ve been humbled by food yet again. This experience is one I’ll carry with me
Hanuman is a master of Thai food, I have had the privilege of cooking with him
in Bangkok and in Chiang Mai at Three Trees Doi Saket Farm. Both experiences expanded my cooking knowledge in more ways than I can express, with words one cannot taste the results.
The Chiang Mai site the land has been enhanced to provide a setting where one can site and think about the place and not just the food. A lot of planning, work, love, sweat, and tears went into not only the classroom/kitchen, also the layout of the land. Ingredients for cooking come from far and wide, yet as the plants at the farm mature, more is found close to the kitchen, and that helps to reflect the depth of flavors that one produces.
Within the first ten minutes of arriving at Three Trees I knew I was never going to look at Thai cuisine the same way again. During the week long cooking intensive we explored Thai cuisine from a historical, philosophical and technical perspective. I am myself working in the restaurant industry as a professional cook, I have worked at all kinds of different restaurants including many Michelin starred establishments. For me, Hanuman exceeded all my expectations.
Before you start the program Hanuman will ask you if there is any specific area or technique you want him to cover and after your requests he will put together the day so it will suit you in the best possible way.
For the first day I requested to do a deep dive into the cuisine of northern Thailand, and so we did. We cooked up a bunch of different “in your face” dishes that really showcased the cuisine of northern Thailand.

After frequently traveling to Southeast Asia every year, every time I go to Thailand I make it a point to cook with Hanuman Aspler on his farm in Doi Saket.
I have taken a range of cooking classes but have never experienced a cooking experience on this level. This is not just a cooking class, it is so much more. Learning all aspects of Thai cuisine makes you look at food through a completely different lens.
Hanuman’s unique approach can not be found anywhere else. I thought I knew a lot about Thai cuisine, but Hanuman is a walking encyclopedia of Thai cuisine. It is not just recipes that are taught, it is so much more.
I was taught how to balance flavors and understand various dishes in a complex manner. Hanuman is such an interesting individual who is full of dedication, kindness, and pure wisdom. I will forever take what I have learned from Hanuman and apply it to my recipes.

It’s hard to wrap up the amount of knowledge I feel I gained from Hanuman in the two weeks we spent together, but somehow, I feel that I learned more then than any other amount of schooling has taught me. My time at Three Trees – Doi Saket was revolutionary. Hanuman has taught experienced chefs that have worked in high level restaurants. I am not one of those chefs. I’m a casual cook who is interested in learning more about cooking Thai food with a sense of authenticity.
Hanuman brings a deep sense of history with every dish and concept. The way he visualizes recipe and process has changed the way I approach cooking. Through his thoughtful methods, I was able to understand and articulate what I tasted and when I was tasting it. Additionally, I was able to learn the historical context of each dish we made. This ultimately led to answering “why”. Why are we making these decisions in the kitchen? When one has the answer to why, and understands the how (via technique, ingredients, etc.), there is no longer guesswork. You are left with informed decisions regarding process and flavor. This is my most important take away from my time with Hanuman. My only regret is not being able to stay longer!
My 8-day workshop with Hanuman at Three Trees Doi Saket has got to be a most influential experience I’ve gained for my understanding, not only of Thai cuisine, but also in the larger sense of overall techniques, flavors, and methodology in approaching cooking.

His way of teaching has given me a different eye when approaching Thai cuisine repertoires and gave me methods in applying these concepts in my own creations.
Above all, spending time with Hanuman at the beautiful Three Trees estate was such a blessing. His kind nature and wisdom made me felt like we’ve known each other for a long time. Moreover, the garden of thai herbs and vegetables, the house and kitchen looking out into the green landscape, the friendliest team that made everything run seamlessly, all made my experience unforgettable and I will for sure be coming back no doubt.

From our discussions of history and theory to the practical lessons, the experience was so fluid and well thought out that I found myself really immersed in the course.
It’s very evident that an immense amount of thought has gone into his teachings and methodology and the presentation is very unique.
Rarely have I had a learning experience that keeps me pondering and considering the subject so intently as I did with Hanuman.
I walked out of the 8-Day course with Khun Hanuman with a full appreciation of Siamese cuisine. Even my simple pasta sauce is noticeably better as I’ve applied his method to the cooking.
Apart from the how-tos and traditional recipes, his approach to the science behind the layers of tastes is remarkable. His technique is also practical, i.e., you won’t need fancy equipment to re-create the same dish at home.

I recently moved to Thailand from the United States. I am a home cook (for now), although I have known I wanted to become more familiar with Thai cuisine for the last couple of years. Our recent move to Bangkok has really solidified my interest in Thai cuisine.
Because I’ve had no professional experience in a kitchen, I did not exactly know what I was getting into by signing up for a 12 day professional course at Three Trees. However, I had been following Hanuman’s work for several months leading up to our move to Thailand and was interested in giving it a try. What came from participating in this course has completely changed the way that I view cooking.
Hanuman’s decades-long experience cooking Thai cuisine, researching and preserving recipes, and teaching was clear from the start. Some of the most respected and skilled chefs in the world have gone through his kitchen. Although he is always able to adapt the same techniques they practice to the less experienced like myself with patience and always keeps learning and teaching at the forefront. I now want to continue practicing and learning about Thai cuisine on a more serious level. If you are someone who is interested in learning beyond what a recipe can show you, Hanuman’s courses are for you. He transitions you from relying on recipes to freehand cooking with ease. You will experience some of the best Thai food you have ever eaten. You will learn about its history and be given access to its secrets.
12 days may have seemed like a lot at the time, but in retrospect, I already want to save up and go for another 12 days to learn a new batch of skills and dishes. I can already tell that the way I approach a Thai menu, a new recipe, seasoning, or just talking about Thai food has changed for the better. I feel more confident with my Thai food knowledge and I hope it continues to grow.
Learning under Dr Hanuman Aspler is both a joy and a privilege. He is widely recognized as 'the' authority on authentic Thai cuisine, which clearly shows in his teaching. During my 30 Day Intensive Course (I would have happily done at least 30 more days) he took me on a journey exploring the landscape of both Thai History and Culture in order to better understand its cuisine; tailor making the course to suit my requests; which in itself was an exhilarating experience, not to mention the actual cooking! I came to Dr Aspler to learn more about Thai food, however to just say that I now have a good working knowledge and understanding of Thai food would be remiss; he also imparted a deep love and respect for this wonderful cuisine, a passion and thirst to learn more, and I have come out of this course a stronger cook in general. I will always be grateful to Dr Aspler for sharing his vast wealth of knowledge, his resources, his recipes (which you will never find anywhere else) and his kindness and patience. The 12 days of cooking Program with hanuman at Three Trees was my best experience to understand Thai food in new ways I’ve never thought about. Before each class hanuman explains the history, politics and culture of the dishes background to make you understand about the dishes. Hanuman gave me a mind map to understand and create Thai food and not just follow the recipe. Hope to be there again soon.
Thank you for all your teachings, I learned beyond what I was expecting, not just about Thai food, but concepts and theories that were also applicable in all my cooking. Two years later today, I still think of all the things I have learned, hoping that I am more mindful when I cook, to think about the hows and whys, the layering of flavors, the ratio of ingredients, to tame certain flavors and how to harness the umami.
Hanuman had also cracked the code for Thai curry paste for me. Up until I was studying with Hanuman, I was always one of those cooks that followed the recipe religiously when it comes to curry paste. Weeks into his intensive course, I was able to make a basic curry paste without looking at a recipe by following his formula. It was a revelation to me, and I don't think I have read or heard of it anywhere else.

There are very few experiences which I can truly call life changing… my 15-day intensive course at Three trees is however certainly one of them! I felt as though I had travelled all corners of Thailand without leaving the school.

I've been living in Thailand for several years, and one of my goals since moving here was to get a deep understanding of Thai food, and to learn how to create dishes that represent the complex flavors of Thai cuisine. Hanuman is an excellent teacher. He knows more about Thai food and its history than just about anyone, and he does a great job of imparting that knowledge to his students. He doesn't just teach you to follow a recipe. He teaches you how to think about flavors and how to create a dish in the way you imagine it to be. I studied with him for five days. During that time I learned the ins and outs of making curry pastes, how to think about seasoning dishes, how to select the right dry and fresh chiles, how to use ingredients that I'd never even heard of before, and much more. Hanuman was always helpful. Five days was enough to get a good overview and be able to go home and try out my new skills. I hope I can go back again to study with Hanuman. I'm just an enthusiast but I can see how chefs could spend 12+ days studying with him. I highly recommend the classes.

I struggle to think of an experience as meaningful as spending time with Hanuman. I had the opportunity to spend two days learning from him, feeling his passion and figuring out how to adapt his mindset to the rest of my life. I understand why people spend up to 30 days at Three Trees - I wish I had. What he teaches you is not purely about food and cooking. What he teaches is a way of life and while with him, you never feel like you’re an understudy. You feel like an observer watching someone practice what they teach. He embodies a spirit unlike many people I’ve encountered in my privileged life and I can’t be more grateful for his patience, wisdom and humanity. I cannot recommend this experience enough.
It’s tricky to recount my time with Hanumanr without veering into sensationalism. If I do it’s only because the experience imprinted on me so.
I’ve seen numerous people go to his farm in Chiang Mai and describe their time there as ‘mind-blowing’, ‘seminal’, or ‘ground-breaking.’ And these aren’t random punters like me, these are Michelin-star chefs, food writers, restaurant owners and the like.
So going into two days at the farm, I couldn’t help but have dangerously high expectations. High as they were, what I learnt- or better still - what I came to understand during my time there exceeded anything I hoped for.
In essence, I went in expecting I would learn some solid principles to apply to my cooking. But over two days, through an eclectic mix of philosophy, spirituality, science, history and tradition Hanuman taught us a new model for thinking about and cooking Thai dishes; a model that is paradoxically, as abstract as it is pragmatic.
For a more practical take on things, I feel like I have walked away with two significant takeaways. Firstly, I’m confident I could go out and cook any number of traditional curries without having to even glance at a recipe. But much more importantly I feel I have the tools to start being the author of my own recipes; to have the knowledge and conviction to create beautiful Thai dishes that are in a way uniquely mine.
Hanuman is by far the person with the most knowledge of Thai food I have ever met.
His way of explaining the history and meaning behind each dish is absolutely amazing.
You will pick up knowledge and skills with Hanuman you will not
find in a book or anywhere else.
If you are interested in Thai food, culture & history this is a must-do.
Can not recommend him highly enough. I will be back next year for sure.
My approach to Thai food and cooking principles have been completely rewritten after the time spent with Hanuman.
He has opened my mind to a new way of thinking about food, dishes, flavour balance and the cooking process, from the very first thought of a dish all the way through to plating and serving.
Rather than just teaching me to cook a selection of recipes and dishes, he has given me the tools and confidence to cook without recipes and even to create dishes of my own, influenced by seasonality and the ingredients available.
As they say, actions speak louder than words: after going through the one day I signed up for, I decided to sign up for a second! I didn't think I had time for a second day, given my limited time in Chiang Mai. But it was clear from my one day there that the class was a rare opportunity not only to learn from a true Thai-cuisine scholar, but to spend time with a remarkable person. I also appreciated gaining insight into his analytical approach to cooking, beyond specific techniques. Also, frankly, the food you produce will probably be some of the most delicious you have while in Thailand.
If I were to return, I would stay near his property, as I would enjoy being in the peaceful bucolic area. But as a first-time visitor to Chiang Mai, it was good to stay in town and explore
After spending a week with Hanuman at Three trees, I feel I was able to really start to create Thai flavours that I would have never imagined before. It was truly an eye opener for me, his teaching methods are very relaxed yet precise and logical and also allowing you to create your own flavours within the parameters set. I thought a week would be sufficient but would have happily stayed for much longer. Everyday was just an incredible experience of new flavours and techniques and a unique approach to cooking in general which I believe can and should be applied to other styles and cuisines.
Not only was the course great but his recommendation of staying up in the hills close to the farm was most certainly worth it, as it was so peaceful and really allowed me to appreciate the nature and fully focus on my day to day learning.

As two ‘non-chefs’ we were initially a little apprehensive before our day at Three Trees. We had been recommended the course by a friend who is a professional chef but had been assured we wouldn’t be out of our depth.
As it turned out we needn’t have been worried - our day with Hanuman was one of the most interesting and enjoyable days of our trip - a must for anyone with an interest in Thai food.
Our only regret was that we didn’t sign up for more days!

Hanuman Aspler not only shares a vault of knowledge about the history of the dishes you make, but challenges you to think about Thai cooking in a totally different light. You work as team and together you build on your knowledge everyday.
Like a mathematician he simplifies the complexity of recipes into ratios, and formulae, and starts each day with coloured chalk, a blackboard, anecdotes and he confesses, “recycled jokes,”.
It is time to put aside your preconceived ideas about what you think you know about Thai food: listen, learn and be prepared to cry when it’s over.
I loved every minute of the five days I spent with him at his beautiful home. Whether you are a professional working chef, or a cook, this is an opportunity that will leave you wanting to go back for more. Thank you so very much Hanuman.

Through researching Lao recipes online, I fortuitously stumbled upon Hanuman's website and learned about Three Trees Doi Saket. As a social scientist who also happens to love cooking, and who spent part of their life growing up in Thailand, I found Hanuman's research and writing on the cuisines of this part of the world to be fascinating and in depth. Not only did the recipes look beautiful, but they were so thoughtfully researched.
Finally - after lifting of travel restrictions - I recently had the opportunity to immerse myself in five days of cooking with Hanuman. The experience was everything I hoped for and more. Hanuman curated a class for my interests and level of experience - having read that he works with many professional chefs, I was not sure what to expect but the level engagement was comfortably tailored. Hanuman is generous with his knowledge. I spent five days learning about the art, science, history and culture of Thai food and flavour in general - each recipe we reviewed before cooking felt like an archaeological dig in and of itself. Perhaps most importantly, we created some mind blowingly delicious dishes.
Learning with Hanuman, I feel I have a better sense not just of the architecture of things such as Thai curries, but I also feel I can reflect upon his approaches to help create more complex flavour profiles in dishes more generally.
On top of this, Three Trees is just a stunning place to learn. Hanuman's staff are a joy and I love his dogs. I stayed in the village of Doi Saket at the recommended resort nearby - it felt like a luxury to be in a place with poor internet and mainly just switch off from the rest of the world in the early mornings and evenings.
If you want to learn more about Thai food and about how to be a better chef in general, I couldn't recommend this place more. I hope to come back regularly as I believe the learning could be endless. I feel privileged to have had entry to a little slice of this special place. Thank you to Hanuman and the staff at Three Trees Doi Saket.
It was quite a humbling experience. It's crazy how we made all those recipes by literally eyeballing every measurement, which at first, I find it counterintuitive but then very liberating at the end. Ohhh and the pounding, there were definitely lots of it! 😄 all in good fun.

I’ve been fortunate enough to visit Hanuman three times now, and after every visit I’m always blown away by his knowledge and guidance when it comes to Thailand and its cuisine, history and culture.
Three Tree’s Doi Saket is a place like no other. You are welcomed in by fantastic staff, and throughout your time there, you will be in safe hands. Hanuman has such a detailed and almost scientific approach
to cooking which I found to be extremely helpful to the learning process.
Without a doubt, Hanuman has shaped me as a chef and given me knowledge that no amount of reading and research could have. Because of him, we have a very successful and constantly evolving restaurant. I can’t wait for my next trip out.
The 2 weeks I spend with hanuman at three trees doi saket were monumental, the Moment you enter three trees you get influenced by the great aura of the place and the people in it. every single person that is part of the “experience”, from the second Hanuman’s worker open the door to three trees in the morning till the moment you are exiting the door in the afternoon, puts you in the correct mood in order to understand the real purpose of the course, which for me it was to understand thai food and culture better and dive into the mentality of the people, rather than just cook a bunch of recipes to use on my menu. Seeing and understanding the essence of Thai cuisine at its deepest roots, was something I was seeking for a long time, and i feel like three trees fulfilled that for me 100%.

I spent five days at Three Trees Doi Saket and within the minutes of arriving you realise you are in for a very special experience. Hanuman’s knowledge on Thai cuisine is out of this world. The way he breaks down and describes Thai cuisine is very interesting and informative and Hanuman takes the time to understand the goals you have set for yourself, moulding his teachings to suit you. Such a great experience! It's a must do for anyone with an interest in cooking Thai food.
I would highly recommenced taking at least one class with Hanuman. His recipes and methods are bigger than a list of ingredients ans can also serve as life lessons. I have found him to be highly intelligent, well articulated. His classes are conducted with youthful enthusiasm. Hanuman's sense of humour is infectious and is a nice balance to his steadfast dedication to authenticity. I intend to come back yearly.
There is not so much more to ask for, or maybe longer/more days in the kitchen to be able to learn and grow even further. This cooking course was really something more than tablespoons, grams and peeling. Learning the DNA/character of each dish, different cooking techniques, visualizing rather than strictly following a recipe, facing fears and evolving, and trying food you’ve already decided you didn’t like. This was so much more than just cooking and eating the dishes.

My time spent at Three trees Doi Saket was such an incredible from start to finish. Hanuman is quite simply one of the most beautiful humans iv ever had the privilege to meet. His energy, knowledge and love is simply remarkable.
A journey through history and time was spent on every dish,
Taking me to a place where I was able to visualise where each dish
Came from, this connects you to the journey of the dish, making you cook in a way toy have never before.
I found the full experience moving in so many ways.
I will be returning to work with Hanuman as soon as possible,
And also signing up to the online classes, as I feel there is a new world to discover.
This is simply a life changing experience.

My wife and I spent a day at Three Trees Doi Saket as part of our honeymoon. We cook a lot of Thai food for friends and family at home, but wanted to be able to understand and get under the bonnet of Thai food, in order to be able to fix issues and exercise our own creativity. Hanuman helped us to do just that. The first part of the day, inclusive of graphs and chalk-board sketches, will stick with us for a long time. Even in just one day, we could start to think about the construction of flavour in dishes we make and eat, the choices which are made, and how to either replicate or amend them. This was not only fascinating in itself and for our future cooking, but added so much value to the final week of our honeymoon, where we ate in some incredible restaurants in Bangkok. To be able to taste and discuss the dishes meaningfully - beyond "this is delicious" - gave a whole new dimension to eating in quality Thai restaurants.
In terms of the practical part of the course, Hanuman and his team were a joy to work with - as were the stunning local ingredients. For the one-day course for an amateur couple such as us, I would describe it as almost a cross between a cooking school and a 'chef's table' experience. We made the dishes ourselves with instruction and feedback throughout, and tasted the dishes together as we went along. But then in the final few moments we would be sat down and Hanuman would plate our (by now delicious) food with the care and attention worthy of a restaurant. It therefore felt like not only a great learning experience, but also a real treat befitting of a honeymoon. That said, it also certainly whetted the appetite to come back one day and spend longer under Hanuman's tutelage , if and when I decide to make the jump and make Thai food more than just a hobby
There are some things in life that are above and beyond our expectations.
Spending 3 magical days with Hanuman wasn't a cooking class but a life experience.
For those who respect and appreciate Dedication, Hard Work, Details, and Depth - This is a must-experience.
