Mixed Clear Shrimp Soup with Salted Fish, Shrimp, Cucumber, Mango and Pickled Garlic (แกงนอกหม้อ ; gaaeng naawk maaw)
Gaaeng naawk maaw is a light and refreshing soup served at room temperature. The ingredients are meticulously sliced as if for a salad, placed in a serving bowl, and covered with a salty and naturally sweet shrimp broth. At the table, diners can adjust the soup to their preferred flavor profile using granulated sugar, lime juice, or pickled garlic brine; hence the name – gaaeng naawk maaw – which literally means "a curry dish outside the pot" or "to cook curry outside the pot".  (Note: The word gaaeng (แกง) in Thai is both a verb and a noun).

A quick and tasty dish from the hot mouth of the dragon with only three ingredients! Flowering Chives, Pork Liver and Garlic. Flowering Chives are all year round favorites for their mild garlicky flavor, and can be purchased inexpensively at almost any Asian market. In Thailand we like to fry them with pork, pork liver or shrimp. These flowering chives are actually the unopened bud stems of garlic chives, also known as Chinese chives.

An Ancient Siamese Recipe for Tom Kha Pet (1890 AD) Duck Simmered in Light Coconut Cream and Young Galangal, and Served with Sour-Sweet Roasted Chili Jam

Tom kha is a well-known and much-loved Thai soup: a creamy, soothing coconut blend, a warm, silky broth in which chicken, mainly, is simmered with young galangal, mushrooms, and, at times, charred-grilled banana blossoms. In other versions, lemongrass and kaffir lime leaves are added, blurring the boundaries between tom kha and the coconut-based tom yam soup (tom yum kati; ต้มยำกะทิ). However, in the late 19th century, tom kha was not a soup at all: it was a dish of chicken or duck simmered in a light coconut broth with a generous amount of galangal. The coconut broth added sweetness to the meat, and the galangal helped to mellow the meat odor. It was then served with a basic roasted chili jam as a dipping relish seasoned along the salty-sour-sweet spectrum.

In this old-fashioned coconut-based curry, orangey shrimp and bright green cucumber shine in a golden haze of curry powder, caressed by the light breeze of Indian flare. Cucumbers are used in traditional Ayurvedic medicine as a coolant, to offset internal heat and to resolve fevers. Thus, like a refreshing oasis in the middle of a shimmering desert, the cucumber counterbalances the chili’s internal heat energy and mellows the fragrant, earthy undertones of the spice blend in the dish.

I love my food very spicy and I'm very generous with all things chili. People like me who also enjoy spicy food, in part, love it because It's a truly a food & mood issue. Chilies are known to boost endorphin levels in the body and that makes us feel better. Maybe that's the reason why marketers get my immediate attention simply with red packaging and the naughty smile of the devil holding to the brand name logo of their products.

This is my take on the famous jungle curry from the Saen Tung district in Trat province. In Trat it is usually cooked with game meat and thinly sliced pineapple shoots (แขนงสับปะรด).

Typically, in Central-style curries, different types of basil are not used together. In higher cuisine, it is an unstated – but understood – practice to avoid blending the definitive scents of various basils. A curry’s final herbal identity is intended to remain definitively with its basil: the citrus notes of holy basil; the spicy-woody and pungent flavor of tree basil; the tart fragrance of lemon basil; or the cooling anise sensation of Thai basil.

This lohn recipe is made using fresh river prawns. The recipe was altered by Lady Plean Passakornrawong (ท่านผู้หญิงเปลี่ยน ภาสกรวงศ์) to provide an alternative to lohn recipes that used pla ra-like fermented shrimp products called กุ้งเจ่า (goong jao) and กุ้งจ่อม (goong jaawm).
