The dish was introduced to me by a street vendor in a forsaken part of town some twenty years ago. Auntie Yai was a true character. She was wearing intensive makeup and I still remember her talkative hilarious manner. I and other customers waiting in line were regularly subjected to nonstop “interrogations” or “interviews”. I must admit I enjoyed the peek into other people’s lives while waiting over an hour for her mouth-watering curried rice croquettes. I loved how the pungent, vibrant swirl of ginger was setting off the fermented pork sourness just perfectly, how the nutty crunch of those peanuts was balanced by the vivid tone of fresh herbs.

I am hearing that Auntie Yai is still selling this dish on the same street, and it is probably the best place in town to have it. I was told that now queues are building up fast and the average waiting time is two hours. In case you are not in town, your time is precious nor you are especially keen on “interviews”, here is a (so deeply) satisfying version of this delicious dish:

Ingredients
- 2 curried rice croquettes (ข้าวทอด)
- 150 g fermented pork meat (naem) (แหนม)
- 1/2 cup ginger (ขิง) juliennes
- 1/4 cup shallots (หอมแดง) finely chopped
- 1-3 tablespoons ground dried chili (พริกป่น)
- 2 tablespoons lime juice (น้ำมะนาว)
- 2 tablespoons fish sauce (น้ำปลา)
- 2 tablespoons unsalted roasted shelled peanuts (ถั่วลิสงคั่ว)
- 1/4 cup fried raw unsalted peanuts (ถั่วลิสงทอดกรอบ)
- 2 tablespoons spring onion (ต้นหอม) chopped
- 2 tablespoons coriander leaves (ใบผักชี) chopped
- 2 tablespoons sawtooth coriander (ผักชีฝรั่ง) chopped
- 1 tablespoon mint leaves (ใบสะระแหน่) hand torn
- 5-10 pieces fried dried bird's eye chili (พริกขี้หนูสวนแห้งทอด)
Ingredients for curried rice croquettes (yield 10-12 pcs)
- 5 cups cooked rice (ข้าวสวย)
- 3 tablespoons khuaa curry paste (พริกแกงคั่ว)
- 2 chicken eggs (ไข่ไก่)
- 2/3 cup grated coconut (มะพร้าวขูด)
- 3 tablespoons kaffir lime leaves (ใบมะกรูด) finely chopped
- 1/2 tablespoon sea salt (เกลือทะเล)
- 1/2 tablespoon granulated sugar (น้ำตาลทราย)
- crispy tempura flour (แป้งทอดกรอบ)
- neutral tasting cooking oil (น้ำมันพืช)
Ingredients red khuaa curry paste
- 6 dried red long chili (phrik chee fa) (พริกชี้ฟ้าแห้ง) deseeded
- 1/2 teaspoon sea salt (เกลือทะเล)
- 2 tablespoon galangal (ข่า) chopped
- 1 tablespoon lemongrass (ตะไคร้) chopped
- 1 tablespoon Thai garlic (กระเทียมไทย)
- 1 1/2 tablespoon shallots (หอมแดง)
- kaffir lime zest (ผิวมะกรูด)
- 1/2 tablespoon fermented shrimp paste (kapi)(กะปิย่างไฟ) roasted

- ถั่วลิสงทอด 1/4 ถ้วย
- ต้นหอมซอย 2 ช้อนโต๊ะ
- ผักชีซอย 2 ช้อนโต๊ะ
- ผักชีฝรั่งซอย 2 ช้อนโต๊ะ
- ใบสะระแหน่ 1 ช้อนโต๊ะ
- พริกแห้งทอด 5-10 เม็ด
ส่วนผสมข้าวทอด (สำหรับ 10-12 ลูก)
- ข้าวสวย 5 ถ้วย
- พริกแกงคั่ว 3 ช้อนโต๊ะ
- ไข่ไก่ 2 ฟอง
- มะพร้าวขูด 2/3 ถ้วย
- ใบมะกรูดซอยละเอียด 3 ช้อนโต๊ะ ประมาณ 5-7 ใบ
- เกลือป่น 1/2 ช้อนโต๊ะ
- น้ำตาลทรายขาว 1/2 ช้อนโต๊ะ
- แป้งสำหรับใช้ชุบแป้งทอด
- น้ำมันพืชสำหรับทอด
ส่วนผสมน้ำพริกแกงคั่ว
- พริกแห้งเม็ดใหญ แกะเม็ดออกแล้วแช่น้ำให้นิ่ม 6 เม็ด
- เกลือป่น 1/2 ช้อนชา
- ข่าหั่นละเอียด 2 ช้อนโต๊ะ
- ตะไคร้หั่นละเอียด 1 ช้อนโต๊ะ
- กระเทียมซอยหยาบ 1 ช้อนโต๊ะ
- หอมแดงซอยหยาบ 1 1/2 ช้อนโต๊ะ
- ผิวมะกรูด 1/2 ช้อนโต๊ะ
- กะปิเผา 1/2 ช้อนโต๊ะ
Instructions
- Soak the dry chilies in hot water until soft, than in a pestle and mortar pound them smooth with a bit of salt as abrasive.
แช่พริกแห้งในน้ำอุ่นจนนิ่ม แล้วนำไปโขลกกับเกลือ - Add chopped galangal and lemongrass.
ใส่ตะไคร้ซอย ข่าซอย ลงไปโขลก - Add garlic, shallots and kafir lime zest, and pound everything to a smooth and homogenous paste.
ใส่กระเทียม หอมแดง และ ผิวมะกรูดลงไปโขลกต่อให้ละเอียด - Add roasted fermented shrimp paste and mix everything together.
เติมกะปิเผาลงไป โขลกต่อไปให้เข้ากัน - Add the curry paste to a mixing bowl together with the cooked rice.
นำเอาข้าวสวย 5 ถ้วยใส่ลงในอ่างผสม จานนั้นนำเอาน้ำพริกที่โขลกไว้แล้วใส่ลงไป 3 ช้อนโต๊ะ - Mix together until each grain of rice is tinted with the curry paste, add eggs and mix well.
คลุกเคล้าส่วนผสมทั้งหมดให้เข้ากัน จากนั้นใส่ไข่ไก่ลงไป 2 ฟอง - Finley grate the white coconut flesh.
ขูดเนื้อมะพร้าวให้ได้ 1/3 ถ้วย - Add the grated coconut and finely chopped kafir lime to the rice mix.
เติมเนื้อมะพร้าวขูดที่ได้ และ ใบมะกรูดหั่นฝอยลงไปในอ่างผสม จากนั้นคนให้เข้ากันดี - Season with salt.
ปรุงรสด้วยเกลือป่น - Season with sugar.
เติมน้ำตาลทรายขาวลงไป - Mix all the ingredients until the mixture is workable and you can shape the rice into a ping pong size balls.
คลุกเคล้าให้เข้ากันจนเม็ดข้าวสามารถจับตัวให้ปั้นเป็นก้อน ๆ ได้ และ ปั้นข้าวเป็นรูปกลม ๆ ขนาดประมาณเท่าลูกปิงปอง - Mix the tempura flour with water.
ผสมแป้งสำหรับชุบทอดกับน้ำเปล่า - Heat oil for deep frying.
นำกะทะตั้งไฟกลาง ใส่น้ำมันสำหรับทอดให้เยอะ ๆ หน่อย ดูให้พอท่วมขนาดของข้าวปั้นที่ทำเอาไว้แล้ว - When the oil is hot, deep each of rice ball in the tempura mixture and fry.
เมื่อน้ำมันร้อนได้ที่แล้ว นำเอาข้าวปั้นลงไปชุบแป้ง และนำไปทอด - Fry until golden and crispy.
ทอดจนข้าวปั้นเริ่มเป็นสีทอง กรอบ - set aside to remove excess oil on kitchen towels.
จากนั้นนำขึ้นจากน้ำมัน และ วางลงบนกระดาษซับน้ำมัน - To prepare the salad, break with your fingers two rice croquettes into bite size pieces.
นำเอาข้าวทอด 2 ลูก บี้ให้เป็นชิ้นเล็ก ๆ - Add fermented pork sausage.
เติมแหนมที่บี้เป็นชิ้นเล็ก ๆ ประมาณ 150 กรัมลงไป - Add ginger juliennes.
ใส่ขิงซอยละเอียดลงไป - Add chopped shallots.
ใส่หอมแดงซอยลงไป - Season with ground roasted dry chilies.
เติมพริกป่นลงไปตามใจชอบ - Add lime juice.
เติมน้ำมะนาว - Add fish sauce.
เติมน้ำปลา - Add ground roasted peanuts.
ใส่ถั่วลิสงคั่วบดหยาบ ๆ ลงไป - Add whole fried peanuts.
ใส่ถั่วลิสงทอดลงไป - Add the chopped herbs, coriander, saw coriander and spring onions.
ใส่ผักชี ผักชีฝรั่ง และ ต้นหอมลงไป - Mix everything together.
คลุกเคล้าส่วนผสมทั้งหมดให้เข้ากัน - Add crispy fried dry chilies.
ใส่พริกแห้งทอดกรอบลงไป - Sprinkle with hand torn mint leaves.
โรยหน้าด้วยใบสะระแหน่ - Serve with an extra whole rice croquette.

Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.

Khanohm Jeen Naam Ngiaao – Shan-Style Tomato Broth over Fermented Rice Noodles with Pork, Chicken Feet and Chicken Blood Cakes (ขนมจีนน้ำเงี้ยว)
A popular noodle dish originating from the Northern region of the Kingdom, khanohm jeen naam ngiaao (ขนมจีนน้ำเงี้ยว) is characterized by its light – yet profound – multi-layered broth. This hearty broth includes an assortment of proteins braised with the dried pollens of cotton tree flowers, and Northern Thai sour cherry tomatoes (มะเขือส้ม); the tomatoes infuse the broth with a subtle tartness that refreshes a full-bodied profile comprising a multitude of fermented ingredients.
The naam ngiaao broth is served over fermented rice noodles and features minced pork, and braised baby back pork ribs with their tender meat clinging to the bone. As well, there are succulent, slow-cooked whole chicken feet, and cubes of slightly bouncy, mauve-hued chicken blood cakes. Served alongside the soup are various toppings, which can include shredded cabbage, bean sprouts, chopped coriander leaves, and spring onions, while dark red chili oil and glossy, charred-fried dried bird’s eye chilies offer a fiery intensity dialed up to your preferred spiciness. In addition, I like to add wok-smoked sour cherry tomatoes and broom-like, crispy-fried dried cotton tree pollen for a surprising textural contrast.
Though the dish is often described as “Shan style”, the word ‘ngiao’ was a derogatory expression for the Shan people. As the disparaging – and outdated – label suggests, the recipe might reflect societal biases and prejudices; thus, at least from the culinary perspective, the ‘ngiao’ in the name of the dish may simply be a nod to the flavors or ingredients favored by The Shan, rather than a claim of authenticity – which could also explain why the dish is based on a Siamese curry paste.

The khaao ngohp goong (ข้าวงบกุ้ง) of Mom Chao Sai Ladawan (Princess Saisawali Phirom) is a dish of seasoned curried rice mixed with shrimp meat, shrimp tomalley, grated coconut, and herbs. The rice mix is then wrapped in banana leaves and grilled. Unwrapping the parcel reveals an intense orange- and russet-brown colored rice cake that is rich, savory and naturally sweet. It is served with a drizzle of thickened coconut cream and herbs.
