I love this straightforward grilled Thai fish curry in banana leaves: it packs a punch. With an aromatic curry mixture that caresses tender, white fish meat with fantastic flavors, this is a wonderful addition to any Thai meal – and very easy to prepare.

Snakehead fish, which were traditionally caught in irrigation ditches or flooded rice fields, benefitted from the aromatic curry paste because it helped eliminate any unpleasant odors that the wild fish might have acquired in their muddy habitats. Nowadays, however, snakehead fish are commercially farmed and can be cooked in a variety of ways without the risk of an undesirable smell.
Grilling is among the world’s oldest cooking methods, so there are many variations of this recipe. In all of them, the fish, along with herbs and curry paste, are wrapped with banana leaves; the banana leaves retain the liquids, keeping the fish meat moist and luscious.

- 500 g snakehead fish (ปลาช่อน) can be substituted with any firm white flesh fish
- 1 tablespoon coriander seeds (malet phak chee) (เมล็ดผักชี) (S2)
- 7 tablespoons lemongrass (ตะไคร้) chopped (about 4 stalks)
- 3 tablespoons fresh red Thai bird’s eye chili (phrik kee noo) (พริกขี้หนููแดง) chopped (about 10-15 chiles)
- 1 teaspoon fresh turmeric (ขมิ้นชัน) about 8 thin slices
- 4 tablespoons shallots (หอมแดง) chopped
- 4 tablespoons Thai garlic (กระเทียมไทย) chopped
- 1 teaspoon sea salt (เกลือทะเล)
- 1 teaspoon fermented shrimp paste (kapi)(กะปิย่างไฟ) grilled
- 1 tablespoon oyster sauce (ซอสน้ำมันหอย)
- 2 chicken eggs (ไข่ไก่)
- 1/2 cup coriander leaves (ใบผักชี) chopped
- 1/2 cup spring onion (ต้นหอม) chopped
- 1/2 tablespoon fish sauce (น้ำปลา)
- 1/2 tablespoon neutral tasting cooking oil (น้ำมันพืช)
- Banana leaf (ใบตอง) for wrapping

Instructions
- Start preparing the curry paste by finely grounding the coriander seeds in a pestle and mortar.

ใส่พริกขี้หนูแดงสดลงไป - Add fresh turmeric
ใส่ขมิ้นสดลงไป - Add chopped shallots and chopped garlic.

ใส่เกลือป่นลงไป - Add roasted fermented shrimp paste.
ใส่กะปิลงไปโขลกให้เข้ากันดี - Pound everything into a fine paste and season with oyster sauce.
ปรุงรสด้วยน้ำมันหอย 1 ช้อนโต๊ะ - Set the curry paste aside.
โขลกส่วนผสมทั้งหมดให้ละเอียด เสร็จแล้วพักเอาไว้ - Clean the fish, remove bones and skin, and cut into 1″ (2cm) cubes.

ใส่น้ำมันพืช 1/2 ช้อนโต๊ะลงไป - mix everything together
คลุกเคล้าส่วนผสมทั้งหมดให้เข้ากันดี - Divide the meat into 4 portions. Wrap each portion in at least three layers of banana leaves.

- Place the wrapps over charcoal grill at low heat.
นำมาปิ้งไฟด้วยเตาถ่าน โดยใช้ไฟอ่อน ๆ - Grill for 5-6 minutes on each side, until the banana leaves just begin to burn.

The khaao ngohp goong (ข้าวงบกุ้ง) of Mom Chao Sai Ladawan (Princess Saisawali Phirom) is a dish of seasoned curried rice mixed with shrimp meat, shrimp tomalley, grated coconut, and herbs. The rice mix is then wrapped in banana leaves and grilled. Unwrapping the parcel reveals an intense orange- and russet-brown colored rice cake that is rich, savory and naturally sweet. It is served with a drizzle of thickened coconut cream and herbs.

This chuu chee features avocado-green banana chilies and the pinkish mixture of pork, shrimp and crab meats. The chilies are sliced open and stuffed with a mixture of the meats, which is seasoned with the basic saam gluuhr (สามเกลอ) paste – the Siamese trio of coriander roots, Thai garlic and white peppercorns. The stuffed chilies are then steamed before being cooked in a thick, reddish, coconut cream-based curry. The liquids collected in the tray during the steaming process are packed with the light sweet fruitiness of the banana chilies; these liquids are reserved and added to the broth, producing a bright and light-bodied dish.
