shrimp-cucumber-curry
c1889 Garee Curry with Shrimp and Cucumber
In this old-fashioned coconut-based curry, orangey shrimp and bright green cucumber shine in a golden haze of curry powder, caressed by the light breeze of Indian flare. Cucumbers are used in traditional Ayurvedic medicine as a coolant, to offset internal heat and to resolve fevers. Thus, like a refreshing oasis in the middle of a shimmering desert, the cucumber counterbalances the chili’s internal heat energy and mellows the fragrant, earthy undertones of the spice blend in the dish.

This recipe is for a coconut-based haaw mohk featuring clown featherback fish meat (เนื้อปลากราย) and slices of firm snakehead fish (ปลาช่อน). It is a classic recipe that follows the ancient haaw mohk tradition with a contemporary accent.
fish-and-two-basil
c1933 An Auspicious fish ball curry with two basils
Typically, in Central-style curries, different types of basil are not used together. In higher cuisine, it is an unstated – but understood – practice to avoid blending the definitive scents of various basils. A curry’s final herbal identity is intended to remain definitively with its basil: the citrus notes of holy basil; the spicy-woody and pungent flavor of tree basil; the tart fragrance of lemon basil; or the cooling anise sensation of Thai basil.
gaaeng jeuut gaawn gaaeo
Clear soup with shredded chicken and rambutan stuffed with pork, shrimp and crab meat
Coconut Balls Rolled in Ground Roasted Unripe Rice (ข้าวเม่าบด ; khaao mao boht)
This ball-shaped dessert has a sweet coconut filling (gracheek), surrounded by a thin crust of pounded unripe rice crumbs, along with a tempting fragrance enriched with a Thai dessert candle or fresh flowers. Demonstrating brilliant creativity and attention to detail, this classical Thai dessert uses only three basic ingredients. In this article, we have elected to follow the traditional recipe published in 1908 by Thanpuying Plean Passakornrawong.

angel
Angel Visiting the Chamber: A Salad of Pomelo, Pork Skin and Shrimp with Chili Jam Dressing, circa 1920s
The name of this dish, yam naang faa yiiam haawng (ยำนางฟ้าเยี่ยมห้อง), translates to ‘Angel Visiting the Chamber Salad’ in English. This celestial salad, which originated in the 1920s, is a playful chili jam-based salad that combines the textural gradients of pomelo, with its citrusy bursts, chewy cooked pork skin, and the sweet and slightly resilient cooked shrimp meat. The pomelo’s citrusy notes are further amplified with thinly sliced lemongrass and kaffir lime leaves sliced into hair-thin juliennes. I like to adjust the sourness and sweetness of the chili jam-based dressing based on the acidity of the pomelo. As our aim is to achieve a final sour-salty and sweet flavor profile, a sour-salty dressing is suggested if the pomelo is sweet, while a salty-sweet dressing pairs better with a sour pomelo.

ข้าวปลี khaao bplee

Tom Yum Goong Soup Recipe of Prawns and SaNoh Flowers Fried Cakes (ต้มยำกุ้งทอดมันดอกโสน ; tom yum goong thaawt man daawk sanoh)
Today’s tom yum goong soup recipe is a refreshing addition to the tom yum soup repertoire. The fried SaNoh Flower Cakes sensationally enhance the shrimp’s natural sweetness, while the flower’s bittersweet aftertaste is a superb tropical match to the citrusy and aromatic hot and sour tom yum goong soup.
Grilled Eggplant Lohn Relish with Shrimp
Lohn relish of grilled eggplant (หลนมะเขือเผากุ้งสด) captivates with its subtle contrasts and complex layering of flavors. Central to this dish is grilled eggplant, which is known for its inherent bitterness due to phenolic compounds like chlorogenic acid. However, this bitterness succumbs to a delightful transformation when the eggplant is simmered in coconut cream. The fats and sugars in the coconut cream effectively mask these bitter notes, resulting in a deep, satisfying savory relish that is both well-balanced and rounded. Accompanying the eggplant are roasted shallots and garnet-blushed grilled tomatoes. The grilled tomatoes not only add natural sweetness and brightness to the dish, but also contribute to its visual charm via their muted orangey reds. This color palette complements the eggplant’s earthy, slightly sweet taste, represented through rich, velvety white-green hues. The interplay of colors in the dish mirror the complexity of its flavors. The minced shrimp meat introduces a briny sweetness and a contrasting texture. The relish is seasoned to a sour-sweet leading salty to follow flavor profile, enhancing the smoky sweetness imparted by the grilled ingredients and creating a palette of flavor and color that is as attractive as it is delicious.

Chicken Curry with Fresh Lychee
Gaaeng gai gap lin jee soht: coconut chicken curry with whole fresh lychee, added last to preserve its floral aroma. Jeeb Bunnag, 1933.
Chiang Mai-Style Chicken Gaaeng Garee (แกงเผ็ดกะหรี่เชียงใหม่ ; gaaeng phet garee chiang mai)
I discovered this unusual curry recipe hidden in a 1970 memorial book for Ms. Bootree Gralaksa. Born in Bangkok in 1898, Ms. Bootree spent her entire life, from childhood on, in a wooden house on Maha Chak Road (Pra Nakorn). One could say that she was born to be a great cook; just fourteen years old when her mother died, Ms. Bootree became the sole caregiver for her four siblings, a duty that she performed with a love and attention that endowed her with remarkable cooking skills. Her memorial book showcases now-forgotten dishes that were popular in the Bangkok of the early 1900s, such as Beautiful Curry (แกงหงษา ; Gaaeng Hohng Saa), and also includes some of her one-of-a-kind culinary creations – such as this dish, which she dubbed “Chiang Mai-Style Spicy Curry”.

Stocked with a contemporary brew of umami-rich ingredients, this ancient, bright and slightly sour coconut-based shrimp and tomato curry demonstrates how simple – yet clever – flavor-layering techniques can spotlight the shrimp and the spectacular savory tomatoes over the curry background.
