ขนมฝอย หรือ ขนมหันตรา
"ขนมฝอย" หรือ "ขนมหันตรา" - อนุสนธิจากตำนานแกงมัสมั่น ที่ Thaifoodmaster ได้นำเสนอไปแล้วนั้น ในบริบทหนึ่งกล่าวถึงหมายรับสั่งของพระบามสมเด็จพระพุทธยอดฟ้าจุฬาโลกที่ให้ พระยาจุฬาราชมนตรี ผู้นำมุสลิม จัดทำอาหารเลี้ยงพระและผู้คน ในคราวสมโภชพระแก้วมรกตและวัดพระศรีรัตนศาสดาราม ในปี พ.ศ.๒๓๕๒ ท่านขุนฯ เกิดความสนใจในอาหารที่นำมาจัดเลี้ยงเป็นอย่างยิ่ง ด้วยในคราวนั้นนิมนต์พระสงฆ์ถึง ๒,๐๐๐ รูปมาในงานบุญที่ยิ่งใหญ่นี้ จึงได้ตามรอย ค้นคว้าประวัติศาสตร์วัฒนธรรมขนมอีกตำรับหนึ่งของคนไทยมานำเสนอ ในอีกมุมมอง ที่เชื่อว่ายังไม่มีที่ใดบันทึกไว้อย่างครบถ้วนสมบูรณ์เช่น Thaifoodmaster แห่งนี้ คราวนี้จึงขอนำเสนอขนมโบราณที่มีเอกลักษณ์เด่นคือมีทั้งแบบหวาน และแบบคาว มาให้รู้จักกันให้ลึกซึ้งตรงกับตำรับดั้งเดิมมากที่สุด ซึ่งได้แก่ "ขนมฝอย" หรือ "ขนมหันตรา"
มะระขี้นกเชื่อม
Our ancestors, the early humans, had to base their food selection only on their senses. Sweet was energy, umami indicated the presence of proteins and saltiness was the sign for the much needed minerals. Generally, they avoided sour taste because it represented rotten or spoiled food, and bitter was the taste tonics and remedies were made of, and yes, it is now confirmed that bitter gourds are good for you.

ข้าวเหนียวแก้ว

One of the charms of street food is that it finds you rather than you finding it. Therefore you are usually in the perfect mood to embrace it.

This treat along with other sweets are traditionally presented on tricycle drawn trays that are protected from insects and pollution by a transparent nylon tent and light up by a single light bulb.

ขนมลอดช่องน้ำกะทิ หรือ นกปล่อย

Thai desserts are usually made from common ingredients and therefore very popular. However, it was only during the 17th century that desserts and sweets actually became part of everyday meals. In the old days, they were served only at auspicious occasions and ceremonies.

During wedding ceremonies, for example, four kinds of sweets are usually served, collectively known as "the four plates dessert" (ขนมสี่ถ้วย ; khanohm see thuay). The ancient Thai expression "To eat four cups of dessert" (กินสี่ถ้วย ; gin see thuay ) used in the central region of the kingdom as an idiom referring to a wedding banquet.

ข้าวเม่าทอด

เมนูนี้จะมีคำอธิบายและวิธีทำเป็นขั้นตอนละเอียดเป็นภาษาไทยและภาษาอังกฤษ

Deceptively simple, the recipe for battered, deep-fried unripe rice and grated coconut banana rolls (khao mao thaawt, ข้าวเม่าทอด) is actually quite challenging to master. Like so many Thai dessert recipes, this seemingly straightforward dish has a complex character.

ขนมเม็ดขนุน

It is believed that this dish was introduced to the Siamese royal cuisine in the middle of the seventeenth century by Portuguese traders. Later, along with other egg yolk-based golden sweets like the golden drops (thong yot ทองหยอด), golden flowers (thong yip ทองหยิบ) and golden threads (foi thong ฝอยทอง), these royal desserts were passed to commoners outside the court.

For the marzipan filling I am using, beside the mung beans, both the flesh and the water of fragrant young coconuts. It gives a rich, sweet and almost nutty flavor which works perfectly with the silky texture of the mung beans and the creamy golden egg yolks coating.

ข้าวเม่าบด
การดัดแปลงตำรับของหวานจากข้าวเม่า ท่านขุนฯ ว่า "ข้าวเม่าบด" นี่แหละคลาสสิกที่สุด ใช้ศิลปะ ในการปรุงแบบไทย ๆ มากที่สุด เพราะมีการนำข้าวเม่ามาบด มาคลุก มาปั้น ผ่านส่วนผสมแค่น้ำตาล และมะพร้าว ซึ่งเป็นหัวใจหลักของการทำขนมไทย พร้อมอบควันเทียนและร่ำกลิ่นดอกไม้ ที่เป็นขั้นตอนสุดท้ายของขนมไทย ตำรับข้าวเม่าชนิดอื่น ไม่มีอย่างนี้ ส่วนผสมใน "ข้าวเม่าบด" จึงมีแค่ 3 อย่าง คือ ข้าวเม่า น้ำตาล มะพร้าวห้าวคั้นกะทิ และ มะพร้าวทึนทึกขูด แค่นี้ก็ทำให้ขนมมีเสน่ห์ได้ขอรับ !!!

ข้าวเม่าคลุก
รู้หรือไม่ว่า..ก็เป็นด้วย "ข้าวเม่าคลุกกับกล้วยไข่" ธรรมดา ๆ นี่แหละ ถึงได้พัฒนาตำรับไปเป็น "ข้าวเม่าทอด" แพงามน่ากิน และพอถูกนำพาเข้าเมือง ข้าวเม่าที่โดน "ราง" จนกรอบพอง เพื่อให้เก็บได้นาน ก็ได้รับการยกระดับ ถูกจับแต่งเติมเสริมสวย กลายเป็น "ข้าวเม่าหมี่" เพราะดัดแปลงจากผัดหมี่กรอบบ้าง "ข้าวเม่าเบื้อง"ที่ดัดแปลงจากขนมเบื้องบ้าง ดูหรูหราเจริญหูเจริญตา เป็นสาวชาวกรุงไปเสียเลย

ส้มฉุน
บทความนี้เราจะมาคุยกันต่อถึงอาหารไทยโบราณที่ชื่อ "ส้มฉุน" อีกตำรับหนึ่งที่ต่างไปจากบทที่แล้ว คราวนี้เป็นเครื่องว่างหวาน ตระกูลลอยแก้ว ที่เหมาะกับการรับประทานในหน้าร้อนด้วยเช่นกัน อาหารตำรับนี้มีกล่าวถึงในบทพระราชนิพนธ์ กาพย์เห่ชมเครื่องคาวหวาน ในสมเด็จพระพุทธเลิศหล้านภาลัย รัชกาลที่ ๒ ซึ่งทรงพระราชนิพนธ์มาแต่สมัยรัชกาลที่ ๑ ความว่า...
