Starting with the decorative objects made out of banana leaves newborns receive to invite protective spirits, and continues their entire life with the endless uses for banana leaves, trunks and fruits; finally ending with the female spirit ghost, maae praai taanee (แม่พรายตานี), who resides in banana trees and Thai beliefs.

Khaao bping (ข้าวปิ้ง) is a dish of seasoned rice mixed with sweet pork and crispy fried garlic, then wrapped in banana leaves and grilled. Unwrapping the parcel reveals a slightly charred rice cake that melts into a pleasantly chewy, smoky, and deliciously savory treat. Created by using basic ingredients of Siamese cuisine, the dish can be served on a bed of banana leaves or on fine porcelain plates, thus touching the hearts of diners from all walks of life.

แกงเขียวหวานเป็ดย่าง

ตำรับแกงแบบไทยแท้ ๆ นั้น ไม่ใช่แกงเข้ากะทิดอกขอรับ ถ้าจะนับความเป็นไทยแท้ ๆ แบบที่เรียกว่า ไทยแท้ (Authentic) นั้นเห็นจะหายากเสียแล้ว คงต้องกลับไปรับประทานพวกต้มปลาร้า หรือแกงเลียง แกงต้มส้ม ไปโน่นล่ะขอรับ ด้วยพริกที่เราเคยชินกินแล้วเผ็ดร้อนกันในปัจจุบันนี้ หาใช่ของพื้นเมืองไทยแท้มาแต่เดิมไม่ พวกฝรั่งเพิ่งนำเข้ามาในสมัยอยุธยานี่เอง ส่วนแกงแบบเข้ากะทิ เราก็รับมาจากแขกมลายูหรือแขกเปอร์เซีย ในสมัยอยุธยาเช่นกันแล้วค่อยมาพลิกแพลงดัดแปลงให้เป็นแกงแบบไทย ๆ

ดังนั้น คนสมัยก่อนถึงได้เรียกพริกสีแดง ๆ เขียว ๆ นี่ว่า พริกเทศ ส่วนเครื่องปรุงที่ให้รสเผ็ดร้อนมาแต่เดิมนั้น เรามักเรียกใช้ พริกไทย ตะไคร้ ขิง ข่า กระชาย เสียมากกว่า จึงเห็นได้ว่าแกงเลียง แกงต้มส้ม แกงต้มปลาร้า ถึงไม่มีพริกเทศเป็นเครื่องปรุงหลัก ภายหลังต่อมาคนไทยจึงมีวัฒนธรรมอาหารพวกต้มแกงดัดแปลงให้ถูกปากถูกลิ้น ใส่พริกเทศ ใส่กะทิ เข้าสมุนไพร พัฒนามาเป็นแกงส้ม ต้มยำ ต้มโคล้ง ต้มข่า แกงเผ็ด แกงคั่ว แกงฉู่ฉี่ แกงพะแนง แกงมัสมั่น ฯลฯ กันสืบมา ซึ่งก็ว่าเป็นแกงออกสีพริกแดงกันเป็นส่วนใหญ่ หากก็มีคนถามว่า แล้วแกงเขียวหวานล่ะ มีมาแต่เมื่อใดกันเล่า เรื่องนี้เห็นทีจะสืบค้นสืบเค้ายากหน่อย เพราะไม่มีบันทึกเป็นลายลักษณ์อักษรแน่ชัด ได้แต่สันนิษฐานและอนุมานเอา

ยำส้มฉุน
ที่ท่านขุนฯ นำ "ส้มฉุนมารื้อฟื้น หรือนำมาให้รู้จักก็เพราะ ไม่อยากให้ตำรับ "ส้มฉุน" หายไป ก็ทั้งอย่างประเภทคาว ในที่นี้จะขอเรียกเป็น "ยำส้มฉุน" เพื่อให้ดูแยกกันกับ "ส้มฉุน" ที่เป็นอาหารหวาน ว่าเป็นตำรับคนละอย่างกัน ถึงจะชื่อเดียวกันก็เถอะ อาศัยกระแส "นิยมไทย" กลับมา ไม่ว่าจะการแต่งกายที่หันมาเน้นผ้าไทย และ อย่างไทย กันมากขึ้น ด้านการกีฬา คนไทยก็ได้รับการยอมรับในแวดวงกีฬาระดับโลกมากขึ้น เช่น แบดมินตัน เป้าบิน ฟุตบอลพรีเมียร์ลีก กอล์ฟ พีจีเอทัวร์ ฯลฯ ทำให้คนไทยตื่นตัว แม้กระทั่งวงการละคร การนำเสนอเรื่องราวสังคมย้อนยุค สมัยเก่าก็มีมากมายหลายเรื่อง ออกมาไม่ขาดตอน คนไทยยังจำบท "ส้มฉุน" ชื่อตัวละครเด็กไทยจอมซน ผู้มีบทบาทอยู่ใกล้ชิดนางเอก ตัวนำเรื่องอย่าง 'แม่นายนกยูง' คนในสมัยอยุธยา ที่หลงยุคมาในปัจจุบัน ในนวนิยายเรื่อง "เรือนมยุรา" ที่ผลิตออกมาเป็นทั้งภาพยนต์และละคร ได้อย่างไม่ลืม นี่ก็มีนัยมีกระแสว่าจะมีการนำกลับมาทำเป็นละครใหม่อีกครั้งหนึ่ง เหล่านี้ล้วนสร้างกระแส "นิยมไทย" กลับมาในสังคมปัจจุบันอีกเช่นกัน

A salty-sweet, water-based chuu chee dish that features a thick, almost dry sauce. The deep burnt-red and shiny chuu chee sauce clings to the skin of the crispy mackerel, gold-colored from frying the fish in pork lard. The aromatic profile of the chuu chee complements the mackerel's rich, full-bodied flavor. Although chuu chee is usually made using freshwater fish, saltwater fish, especially mackerel, is featured in chuu chee dishes prepared along the coasts of the Central Plains. This is especially common during the rainy season, when the mackerel is plentiful and of excellent quality.

I love this straightforward grilled Thai fish curry in banana leaves because it packs a punch with its aromatic curry mixture that embrace the white and tender fish meat with great flavors. It is a great addition for any Thai meal and very easy to prepare.

Snakehead fish, traditionally caught from irrigation ditches or flooded rice fields, benefits from the aromatic curry paste because it helps to eliminate unpleasant odors which wild caught fishes might acquire from their muddy habitat. Nowadays though, it is commercially farmed and one can safely cook it in various ways with no risk of those undesirable odors.

พูดถึงอาหารไทยแท้ไทยโบราณ ท่านรู้หรือไม่ว่า พืชชนิดใดที่คนไทยสมัยก่อนนำมาให้รสเปรี้ยวในสำรับอาหารมากที่สุด ? ถ้าเป็นปัจจุบันจะตอบได้ง่าย ๆ ว่าเป็น "มะนาว" แต่สมัยก่อนนั้น ไม่ใช่เลยขอรับ คนไทยอาศัยความเปรี้ยวจาก"มะขาม" มากที่สุด ใช้ทั้งยอดอ่อน ดอก ฝักอ่อน และ โดยเฉพาะมะขามเปียก แต่ทราบไหมขอรับว่า ส่วนใหญ่น้ำมะขามเปียกมักไม่ใช่องค์ ประกอบเด่นในอาหารไทย ตัวมะขามเปียกเอง ก็นำมาทำเป็นอาหารหลักไม่ได้ ไม่เคยมีตำรับ ยำมะขามเปียก แกงมะขามเปียก หรือ มะขามเปียกลอยแก้ว แต่อย่างใดเลย อย่างที่เห็นก็แค่เป็นเครื่องดื่ม ในกลุ่มน้ำปานะ ที่ภิกษุในศาสนาพุทธสามารถฉันได้ในยามวิกาล เช่น น้ำมะขาม

The first Thai restaurant in London was opened during the 1960's by HRH Princess Jurairat Nasiriman (1910-2000) (พระเจ้าวรวงศ์เธอ พระองค์เจ้าจุไรรัตนศิริมาน), the granddaughter of HRH King Mongkut (Rama IV). Princess Jurairat chose to offer this salad on the menu and named it "Salad of Thai Milkweed Flower". (Other names: Cowslip creeper, Telosma Cordata). This fresh and tasty salad is so vibrant and easy for us to enjoy, it takes in the very basic flavors, sweet, salty, hot and sour and wrap them in a creamy coat of reduced coconut cream. The milkweed flower buds retain their crunchiness and their pleasant fragrance with only a gentle and very quick blanching in sweet boiling water.

Kanchanaburi-Style Snakehead Fish Jungle Curry with Bitter Yellow Eggplants (แกงป่าปลา ; gaaeng bpaa bplaa)
This recipe is adapted from a recipe I obtained from a jungle food restaurant in Kanchanaburi province. The paste is a downgrade of a phrik khing paste – it omits the coriander roots and shallots. In addition, the recipe substitutes the fermented shrimp paste (kapi) with maawn fermented fish paste (กะปิมอญ; gabpi maawn), which is a popular ingredient among the Mon-Burmese population of the western province. The lack of shallots eliminates any sweetness that might impair the sharpness and heat of the dish. Furthermore, a double hit of citrus notes from holy basil are infused into the dish: from the holy basil flowers added to the paste and the holy basil leaves added to the curry.

Smoked duck stuffed with a mackerel and chestnut filling is a dish that defies cultural boundaries. An exemplar of blended culinary influences, featuring inviting colors and an elegant presentation that serve as a prelude to the complex flavors and textures that await, the dish is an eloquent testament to the cooking style of Mrs. Samaknantapol (Jeep Bunnag, who went by the pen name “the granddaughter of Maae Khruaa Huaa Bpaa”). In the 1930s. Mrs. Jeep Bunnag published her first cookbook. Following in the footsteps of her revered grandmother-in-law, Lady Plean Passakornrawong, she continued to document the art of Siamese cuisine through the treasured books she published and was known for her ability to merge culinary traditions into beautiful and innovative dishes that represent an era. The rich, dark color of the smoked duck’s skin is visually striking and appetizing, evoking a sense of indulgence and luxury. The smoky flavors that permeate the meat reflect our deep connection to primal cooking techniques, a fascinating juxtaposition to the refined presentation of the dish. When the smoked duck is sliced, its succulent pink meat is revealed, surrounding the golden filling of chestnuts and mackerel.
