Kanchanaburi-Style Snakehead Fish Jungle Curry with Bitter Yellow Eggplants (แกงป่าปลา ; gaaeng bpaa bplaa)
This recipe is adapted from a recipe I obtained from a jungle food restaurant in Kanchanaburi province. The paste is a downgrade of a phrik khing paste – it omits the coriander roots and shallots. In addition, the recipe substitutes the fermented shrimp paste (kapi) with maawn fermented fish paste (กะปิมอญ; gabpi maawn), which is a popular ingredient among the Mon-Burmese population of the western province. The lack of shallots eliminates any sweetness that might impair the sharpness and heat of the dish. Furthermore, a double hit of citrus notes from holy basil are infused into the dish: from the holy basil flowers added to the paste and the holy basil leaves added to the curry.
The Elegance of Khanohm Khaang Khaao (ขนมค้างคาว)
If palaces represent grandeur and wealth within a society, and poems often focus on emotional experience or the beauty of language, then the significance of a dumpling may be inferred by its structured elegance and minimalism – each fold and pleat a deliberate act, and each filling a curated experience constructing comfort in its most elemental form. Khanom khaang khaao (ขนมค้างคาว) is a traditional Siamese fried, triangular-shaped dumpling with obvious Chinese origins. Its earliest recorded recipe can be traced back to Jao Khraawk Thaawng Yuu (เจ้าครอกทองอยู่), a distinguished aristocrat from the royal court of Ayutthaya. Historical records indicate that, from the early days of the Rattanakosin era, her recipe was a favored snack within the Siamese royal court. These dumplings are shaped like triangles and, according to some, resemble bats: For this reason, they are called khanom khaang khaao (ขนมค้างคาว) – ‘the bat’s treat’. The dumpling’s dough is made from rice and mung bean flours; its filling is prepared by combining grated coconut and shrimp meat, which are cooked together into a dense, flavorful mixture that brings out the nutty-sweet taste of the grated coconut and the savory-sweet flavors of the shrimp. Kaffir lime leaves, sliced into hair-thin juliennes, add a hint of citrus.

"ต้มข่า" แต่เดิม ซึ่งเป็นอาหารของชาวบ้านทั่วไป อาหารชนิดนี้จัดเป็นแกงอย่างหนึ่ง ที่ใช้เนื้อเป็ด เนื้อไก่ หรือ เนื้อปลา ต้มเคี่ยวกับข่าอ่อนในน้ำกะทิ รับประทานกับน้ำพริกหรือน้ำพริกเผา เป็นอาหารพื้น ๆ ของคนไทย ที่เดี๋ยวนี้เปลี่ยนแปลงกลายพันธุ์จนมีลักษณะเข้าใกล้ "ต้มยำกะทิ"
เมื่อราวร้อยกว่าปีก่อนนั้น คนส่วนใหญ่ยังปรุง "ต้มข่า" ในแบบที่ได้เล่ามาอยู่เลย "ตำรากับเข้า" ของ "หม่อมส้มจีน" (ร.ศ.๑๐๙) ก็เขียนถึง "ต้มข่า" ตำรับนี้ เป็นของทำง่ายอย่างสามัญ จะเห็นได้ว่าคนรุ่นเก่าจะเน้นกิน “ต้มข่า” ที่เนื้อสัตว์และข่าอ่อน จิ้มกับน้ำพริกเผาชูรสข้างนอกถ้วย มิใช่ปรุงรสสำเร็จเปรี้ยวเค็มหวานในน้ำแกงอย่างปัจจุบัน

จะเห็นได้ว่าคนรุ่นเก่าจะเน้นกิน "ต้มข่า" ที่เนื้อสัตว์และข่าอ่อน จิ้มกับน้ำพริกเผาชูรสข้างนอกถ้วย มิใช่ปรุงรสสำเร็จเปรี้ยวเค็มหวานในน้ำแกงอย่างปัจจุบัน....

This old-fashioned Thai coconut curry dish is a simple expression made with ingredients commonly available to Thais, it features steamed mackerels - the fish that Thai people probably love the best and the stems of the lotus flowers - one of Buddhism's most recognized motifs.

The fish together with peeled lotus stems are boiled in coconut milk, to which a simple yet very aromatic curry paste, made only of white pepper corns, shallots and fermented shrimp paste is added.

Typically, in Central-style curries, different types of basil are not used together. In higher cuisine, it is an unstated – but understood – practice to avoid blending the definitive scents of various basils. A curry’s final herbal identity is intended to remain definitively with its basil: the citrus notes of holy basil; the spicy-woody and pungent flavor of tree basil; the tart fragrance of lemon basil; or the cooling anise sensation of Thai basil.

Faux frog salad is a rich, elegant dish featuring tender chicken braised in coconut cream and young coconut flesh with a chili-jam based dressing. Utilizing an old-fashioned salad assembly technique – the ‘mix and layer’ – this is a visually striking salad with alternating layers of reds and whites. The name of this vintage dish – Faux Frog Salad – could be a reflection of the swinging social norms in Siam during the roaring twenties, a period of significant social change; as the country sought to navigate the challenges of modernization, Siamese society was shifting its dietary preferences away from the frog, once a common, versatile and popular ingredient. Thus, through the desire for distinction, chicken, an ingredient often compared to the taste of everything, was preferable to frog.

mee graawp sohng khreuuang (หมี่กรอบทรงเครื่อง), is an exquisitely regal dish of crispy rice vermicelli. The delicate noodles strands are washed and dried, then fried to a crisp light-golden hue. They retain their brittle crunch and airy texture even after being stir-fried with a clinging sticky sauce that encases the noodles in a thin layer of sheen. This sauce, mixed into the noodles together with other ingredients such as thin slices of pickled garlic and bitter orange peel, impart the dish with a light, fresh sweet and sour, and slightly salty and citrusy glaze.

Phra Suli - Three-Flavor Seasoned Rice with Shrimp, Firm Pork Fat and Pork Skin (ข้าวพระศุลี; Khaao Phra Soolee)
Mrs. Paan Nanthaathiwat (คุณปาน นันทาถิวัฒน์) (1893-1955) was known for her kitchen skills. She often cooked for friends and family, spending time in the kitchen with her best friend, Mrs. Yim Pichaiyat Bunnag (คุณยิ้ม พิชัยญาติ บุนนาค (1892-1976). Thus, it was not a surprise when in 1953 she authored a recipe book as part of her merit offering on her 60th birthday. Sadly, Mrs. Paan passed away a year later and the publication, titled Hoong Khaao Dtohm Gaaeng (หุ้งข้าวต้มแกง), was later printed as a memorial book for her funeral. In 1977, the volume was reprinted for the funeral of her best friend, Mrs. Yim. It is unclear why Mrs. Paan named this citrusy, sour, and salty seasoned rice dish after Lord Shiva, calling it “Phra Suli (พระศุลี ; phra soolee)”. Yet I believe the name of the dish is meant to evoke the elegance and delicacy of the deity rather than to reference cultural authenticity or tradition.
