สวัสดีครับ วันนี้หนุมานมานำเสนอเมนูอาหาร “งบปลาช่อน” ซึ่งเป็นเมนูที่มีสูตรในการทำหลากหลายวิธี หลายสูตร เช่น บางสูตรใส่ใบโหระพา ใบมะกรูด และ ผักสมุนไพรอื่น ๆ หรือ บางสูตรใช้เครื่องแกงงบไม่เหมือนกัน แต่รับรองว่า เมนู “งบ” เป็นเมนูอาหารที่ทำไม่ยาก และมีรสชาติดี โดยการทำงบนั้นจะนำเนื้อปลาไปห่อด้วยใบตองแล้วนำไปปิ้งบนเตาถ่านด้วยไฟอ่อน ๆ ซึ่งใบตองจะช่วยเก็บความชื้น ของเนื้อปลาไม่ให้แห้ง และ เนื้อนุ่มดี

Ingredients
- 500 g snakehead fish (ปลาช่อน) can be substituted with any firm white flesh fish
- 1 tablespoon coriander seeds (malet phak chee) (เมล็ดผักชี) (S2)
- 7 tablespoons lemongrass (ตะไคร้) chopped (about 4 stalks)
- 3 tablespoons fresh red Thai bird’s eye chili (phrik kee noo) (พริกขี้หนููแดง) chopped (about 10-15 chiles)
- 1 teaspoon fresh turmeric (ขมิ้นชัน) about 8 thin slices
- 4 tablespoons shallots (หอมแดง) chopped
- 4 tablespoons Thai garlic (กระเทียมไทย) chopped
- 1 teaspoon sea salt (เกลือทะเล)
- 1 teaspoon fermented shrimp paste (kapi)(กะปิย่างไฟ) grilled
- 1 tablespoon oyster sauce (ซอสน้ำมันหอย)
- 2 chicken eggs (ไข่ไก่)
- 1/2 cup coriander leaves (ใบผักชี) chopped
- 1/2 cup spring onion (ต้นหอม) chopped
- 1/2 tablespoon fish sauce (น้ำปลา)
- 1/2 tablespoon neutral tasting cooking oil (น้ำมันพืช)
- Banana leaf (ใบตอง) for wrapping
ส่วนผสม
- ปลาช่อน 1 ตัวใหญ่ จะได้เนื้อปลาประมาณ 1/2 กิโล
- เม็ดผักชี 1 ช้อนโต๊ะ
- ตะไคร้หั่นฝอย 7 ช้อนโต๊ะ ประมาณ 4 ต้น
- พริกขี้หนูสดสีแดง 3 ช้อนโต๊ะ ประมาณ 10-15 เม็ด
- ขมิ้นสดเหลือง 1 ช้อนชา ประมาณ 8 แว่น
- หอมแดงซอย 4 ช้อนโต๊ะ
- กระเทียม 4 ช้อนโต๊ะ
- เกลือป่น 1 ช้อนชา
- กะปิเผา 1 ช้อนชา
- น้ำมันหอย 1 ช้อนโต๊ะ
- ไข่ไก่ 2 ฟอง
- ผักชีหั่นฝอย 1/2 ถ้วย
- ต้นหอมหั่นฝอย 1/2 ถ้วย
- น้ำปลา 1/2 ช้อนโต๊ะ
- น้ำมันพืช 1/2 ช้อนโต๊ะ
- ใบตอง สำหรับห่อ
Instructions
- Start preparing the curry paste by finely grounding the coriander seeds in a pestle and mortar.
เริ่มทำน้ำพริกเครื่องแกงงบโดยนำเม็ดผักชี 1 ช้อนโต๊ะ ลงไปโขลกให้ละเอียค - Add chopped lemon grass.
ใส่ตะไคร้ซอยหยาบ ๆ ลงไปโขลก - Add fresh chopped bird’s eye chilies.
ใส่พริกขี้หนูแดงสดลงไป - Add fresh turmeric
ใส่ขมิ้นสดลงไป - Add chopped shallots and chopped garlic.
ใส่กระเทียม และ หอมแดง ลงไปโขลกต่อ - Add salt.
ใส่เกลือป่นลงไป - Add roasted fermented shrimp paste.
ใส่กะปิลงไปโขลกให้เข้ากันดี - Pound everything into a fine paste and season with oyster sauce.
ปรุงรสด้วยน้ำมันหอย 1 ช้อนโต๊ะ - Set the curry paste aside.
โขลกส่วนผสมทั้งหมดให้ละเอียด เสร็จแล้วพักเอาไว้ - Clean the fish, remove bones and skin, and cut into 1″ (2cm) cubes.
นำปลาช่อนมาทำความสะอาด ขอดเกล็ด แล่กระดูกกลางออก เสร็จแล้วหั่นเป็นชิ้นสีเหลี่ยม ขนาดประมาณ 1 นิ้ว - In a mixing bowl, add to the fish meat eggs and the curry paste.
นำเอาเนื้อปลามาผสมกับไข่ไก่ 2 ฟอง และ น้ำพริกเครื่องแกงงบ ให้เข้ากัน - Add chopped spring onions and chopped coriander.
ใส่ผักชี และ ต้นหอมหั่นฝอยลงไป - Season with fish sauce.
ปรุงรสด้วยน้ำปลา 1/2 ช้อนโต๊ะ - Add neutral flavor oil.
ใส่น้ำมันพืช 1/2 ช้อนโต๊ะลงไป - mix everything together
คลุกเคล้าส่วนผสมทั้งหมดให้เข้ากันดี - Divide the meat into 4 portions. Wrap each portion in at least three layers of banana leaves.
นำปลาที่คลุกไว้มาเรียงบนใบตอง ฉีกใบตองให้แผ่นใหญ่หน่อย เวลาห่อปลาต้องซ้อน 2-3 ชั้น - Secure the ends with toothpicks.ปิดปลายห่อด้วยไม้กลัด หรือ ไม้จิ้มฟัน
- Place the wrapps over charcoal grill at low heat.
นำมาปิ้งไฟด้วยเตาถ่าน โดยใช้ไฟอ่อน ๆ - Grill for 5-6 minutes on each side, until the banana leaves just begin to burn.
ปิ้งประมาณ 5-6 นาที หรือ จนสุก เวลาปิ้งคอยกลับปลาไปมาเสมอ - Serve immidiatly.

Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.
The dish was introduced to me by a street vendor in forsaken part of town some twenty years ago. Auntie Yai was a true character. She was wearing intensive makeup and I still remember her talkative hilarious manner. I and other customers waiting in line were regularly subjected to nonstop “interrogations” or “interviews”. I must admit I enjoyed the peek into other people lives while waiting over an hour for her mouth watering curried rice croquettes. I loved how the pungent, vibrant swirl of ginger was setting off the fermented pork sourness just perfectly, how the nutty crunch of those peanuts was balanced by the vivid tone of fresh herbs.
This recipe would probably change your perception about the term “salad”, maybe because its dressing has a multi layered, curry-like personality, rather than the common sour vinaigrette-like dressing, or maybe because it takes some good few hours to prepare, somewhat longer than simply opening a bag of hydroponic greens.
This salad is the fruit of the dedication of court ladies from aristocratic households, that for centuries perfected and elaborated on the art of cooking through detailed and calculated process, to create sophisticated dishes that are not only delicious but also very healthy and visually pleasing.
These ladies made a very large commitment for small things, and they attended all their time and efforts to make minor things better and getting the small things just right.
