หนุมานเป็นคนชอบทานอาหารเผ็ด ทุกครั้งเวลาที่ผมไปซื้อของในตลาด หรือ ซุปเปอร์มาร์เก็ต และที่เห็นสินค้าที่ออกแบบฉลากเป็นรูปพริกแดง ๆ สีร้อน ๆ ผมจะทนไม่ไหวต้องซื้อกลับมาบ้านทุกครั้ง หรือ เวลาไปเดินในตลาดสดแล้วเห็นสินค้าที่เขียนว่า เผ็ดมาก ผมก็จะขอชิม แต่แล้วก็ต้องบอกว่า ไม่เห็นเผ็ดเลยทุกครั้ง หรือ เวลาไปเที่ยวต่างจังหวัดผมจะต้องตามล่าหาพริกประจำท้องถิ่นของเค้ามาลองดูว่าเผ็ด หอม แค่ไหน
พริกแห้งที่ผมชอบมากที่สุดมีสองแบบ คือ พริกหัวเรือ และ พริกกระเหรี่ยง ซึ่งพริกทั้งสองนี้มีความเผ็ด และ ความหอม มาก
ตอนที่ผมไปเที่ยวสังขละบุรี ระหว่างทางไปมีร้านขายปลาแห้งรมควัน ซึ่งป้าเค้าจะทำใหม่ ๆ ทุกวัน เพราะว่าร้านขายนี้อยู่ใกล้ กับเขื่อนเขาแหลม ทำให้มีปลาสด ๆ จากเขื่อนมาทำเป็นปลารมควันทุกวัน โดยป้าเค้าก็มีปลาคังรมควันขายด้วย เนื้อกรอบอร่อยมาก ผมได้ซื้อมา 3 กิโลกรัม ราคากิโลละ 400 บาท

Ingredients
(Quanities are for one small batch)
- 2 1/2 tablespoons smoke-dried fish (all varieties) (ปลาย่างรมควัน) or any other smoked dry fresh water fish, grilled and pounded
- 1 1/2 tablespoons dried Karen chili (phrik gariang) (พริกกะเหรี่ยงแห้ง) roasted and grounded
- 1 teaspoon Thai garlic (กระเทียมไทย) Roasted
- 1 teaspoon shallots (หอมแดง) Roasted
- 1/2 teaspoon fermented shrimp paste (kapi)(กะปิย่างไฟ)
- 1/2 teaspoon tamarind flesh (เนื้อมะขามเปียก) roasted, seeds and fibers removed
- 1 teaspoon palm sugar (น้ำตาลมะพร้าว)
- 1 teaspoon fish sauce (น้ำปลา)
- 1/4 teaspoon sea salt (เกลือทะเล)
Ingredients (Quantities for 4Kg batch)
- 1,500 g smoke-dried fish (all varieties) (ปลาย่างรมควัน) or any other smoked dry fresh water fish, grilled and pounded
- 720 g dried Karen chili (phrik gariang) (พริกกะเหรี่ยงแห้ง) roasted and grounded
- 360 g Roasted garlic paste
- 360 g shallots (หอมแดง)
- 120 g fermented shrimp paste (kapi)(กะปิย่างไฟ)
- 180 g tamarind flesh (เนื้อมะขามเปียก) seeds and fibers removed
- 480 g palm sugar (น้ำตาลมะพร้าว)
- 240 g fish sauce (น้ำปลา)
- 45 g sea salt (เกลือทะเล)
ส่วนผสม (เป็นส่วนผสมที่ผ่านการเตรียมเบื้องต้นมาแล้ว ซึ่งจะอธิบายรายละเอียดอยู่ในวิธีการทำ)
- ปลาคังแห้งรมควัน ย่างแกะเอาแต่เนื้อและป่นให้ละเอียด 2 1/2 ช้อนโต๊ะ
- พริกกระเหรี่ยงแห้ง หรือ พริกขี้หนูแห้ง คั่วและป่นให้ละเอียด 1 1/2 ช้อนโต๊ะ
- กระเทียมเผาและบดให้ละเอียด 1 ช้อนชา
- หอมแดงเผาและบดให้ละเอียด 1 ช้อนชา
- กะปิเผา 1/2 ช้อนชา
- เนื้อมะขามเปียกเผาสับให้ละเอียด 1/2 ช้อนชา
- น้ำตาลมะพร้าว 1 ช้อนชา
- น้ำปลา 1 ช้อนชา
- เกลือป่น 1/4 ช้อนชา
ส่วนผสมคำนวณไว้แล้วสำหรับทำน้ำพริกนรก 4 กก. (เป็นส่วนผสมที่ผ่านการเตรียมเบื้องต้นมาแล้ว ซึ่งจะอธิบายรายละเอียดอยู่ในวิธีการทำ)
- 1,500 กรัม ปลาคังแห้งรมควัน ย่างแกะเอาแต่เนื้อและป่นให้ละเอียด
- 720 กรัม พริกกระเหรี่ยงแห้ง หรือ พริกขี้หนูแห้ง คั่วและป่นให้ละเอียด
- 360 กรัม กระเทียมเผาและบดให้ละเอียด
- 360 กรัม หอมแดงเผาและบดให้ละเอียด

Instructions
- Roast the dry chilies over very low flame, stir constantly for even roasting.
นำพริกแห้งมาคั่วให้กรอบโดยใช้ไฟอ่อน - Be careful not to burn the chilies, what we are looking for is a yellowish tint at which stage the chilies are crispy and very aromatic.
ระวังอย่าให้พริกไหม้เพราะจะทำให้มีรสขม - Ground the chilies in a pestle and mortar or a food processor. Set aside.
ป่นพริกที่คั่วมาให้ละเอียด เสร็จแล้วพักเอาไว้ - Place the catfish over the charcoal grill, if flames burst than your grill is probably too hot. Place some ash over the charcoals or wait for a while before continuing.
นำปลาคังมาย่างบนเตาถ่านโดยใช้ไฟอ่อน - Slowly roast the dry fish until golden and crispy.
ย่างจนเนื้อปลากรอบ - With your fingers break the fish meat into small chunks.
แกะเอาแต่เนื้อปลา - In a pestle and mortar pound the fish meat fine and set aside.
นำเนื้อปลาที่ได้มาลงไปโขลกให้ละเอียด เสร็จแล้วพักเอาไว้ - Wrap the shrimp paste with banana leaf and roast over charcoal grill on low heat until fragrant. Set aside.
นำกะปิมาห่อด้วยใบตอง แล้วนำไปเผาไฟจนสุกหอม เสร็จแล้วพักเอาไว้ - Wrap tamarind flesh after the seeds have been removed with banana leaf.
นำเนื้อมะขามเปียกห่อด้วยใบตอง - Grill on low heat until the banana leaf slightly burn.
นำไปเผาไฟจนใบตองไหม้เล็กน้อย - The tamarind would become stickier and much sourer. The reason of roasting the tamarind is to reduce its water content which will allow the finished product to store unspoiled for longer period.
การเผามะขามเปียกจะทำให้เนื้อมะขามเปียกมีความเหนียวมากขึ้น และ ทำให้เก็บได้นานขึ้น - With a heavy knife chop the roasted tamarind into a paste. if the tamarind gets stuck to the knife while chopping you should wet the knife. Set the roasted tamarind paste aside.
นำเนื้อมะขามเปียกเผาที่ได้มาสับ (เวลาสับเนื้อมะขามเปียก ถ้ามะขามติดมีด ให้นำมีดไปจมในน้ำเปล่าก่อนจะช่วยทำให้สับได้ง่ายขึ้น) เสร็จแล้วพักเอาไว้ - Roast unpeeled garlic over low heat until slightly charred.
นำกระเทียมไปเผา - Peel the garlic.
ปอกเปลือกกระเทียมออก - Roast unpeeled shallots over low heat until soft and slightly charred.
นำหอมแดงไปเผาจนสุก - Peel the shallots.
แกะเปลือกออก - In a pestle and mortar pound the roasted garlic together with the roasted shallots to a fine paste. Set aside.
นำกระเทียมเผาและหอมเผาลงไปโขลกในครกให้ละเอียด เสร็จแล้วพักเอาไว้ - In this picture you can see all the ingredients we prepared, we will combine the ingredients in batches depends on the size of your pestle and mortar.
จะได้วัตถุดิบทั้งหมด ก่อนที่จะผสมเป็นน้ำพริกนรก - Mix pounded dry fish and ground chili.
นำปลาป่น และ พริกป่น ลงไปโขลกรวมกัน - Add roasted shallots and garlic paste.
ใส่กระเทียมและหอมเผาที่บดมาแล้วลงไป - Add roasted fermented shrimp paste.
ใส่กะปิเผาลงไป - Add roasted tamarind paste.
ใส่เนื้อมะขามเปียกเผาลงไป - Season with palm sugar and salt.
ปรุงรสด้วย น้ำตาลมะพร้าว และ เกลือ - Mix well.
โขลกทั้งหมดให้เข้ากันดี - Taste and adjust flavors with fish sauce.
ชิมและปรุงรสด้วยน้ำปลา - Mix well and repeat the mixing process in batches.
โขลกส่วนผสมทั้งหมดให้เข้ากันดี - Transfer the mix into a dry wok, and over low heat slowly roast it while making sure to mix it constantly.
นำน้ำพริกที่ได้มาไปคั่วด้วยไฟอ่อน ๆ และ หมั่นคนเรื่อย ๆ - Roast until almost dry and all the flavors melt together. Allow to cool completely before storing.
ผัดน้ำพริกให้พอแห้ง อย่าให้แห้งมาก - Serve.

Rice Seasoned with Young Tamarind Relish, Sweetened Fish and Pickled Morning Glory (ข้าวคลุกน้ำพริกมะขามอ่อน ผักบุ้งดอง ปลาแห้งผัดหวาน และ ปลาดุกย่าง; Khaao Khlook Naam Phrik Makhaam Aawn Phakboong Daawng Bplaa Haaeng Phat Waan Lae Bplaa Dook Yaang)
Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.
c1941 Old-Fashioned spicy curry of chicken with young chilies (แกงเผ็ดแบบโบราณอย่างคุณถนอม ปาลบุตร พ.ศ. 2484 ; gaaeng phet baaep bo:h raan)
This is a classical Siamese spicy curry that displays a spicy, salty and sweet flavor profile, and uses common curry ingredients such as pea eggplants and young green chilies with an interesting dry spice profile.
Thai Chili Jam – This is a chili jam similar to what is commonly sold under the name of roasted chili paste (naam phrik phao; น้ำพริกเผา). It is widely used as a condiment in salad dressings, soups, and seasoning for stir-fried dishes. I like to have control over my pantry ingredients, so I always use homemade naam phrik phao. Furthermore, since it is a basic ingredient used in so many dishes, anything less than the best will drastically impair the quality of your dishes.
Perfumed Muslim-style Curry of Fresh Chilies with Beef (แกงเขียวหวานเนื้อทรงเครื่อง; Gaaeng Khiaao Waan Neuua Sohng Khreuuang)
The Indian and Muslim cuisines present distinct approaches to using dried spices in curries, both of which influence Siamese cuisine in different ways. Indian-inspired Siamese curries spotlight chilies for their vibrant color, fragrance, flavor and heat, while spices like cumin and coriander play a supporting role. The spices complement and temper the chilies’ intensity, creating a rounded, multi-layered flavor profile; nonetheless, the chilies remain the star ingredient, gently complemented by the spices.
Conversely, Muslim-influenced curries, such as massaman curry, prioritize spices over chilies. Spices like cardamom, nutmeg and mace take center stage, while the chilies provide subtle background heat rather than being the primary flavor. In these curries, the focus is on the rich, warm and complex aromas created by the blend of spices, which is a defining characteristic of many Muslim dishes.
Moreover, Siamese cuisine favors using rehydrated dried chilies in curries for their depth; this depth is highly appreciated, along with the complexity, and comparatively milder heat of the rehydrated dried chilies. As well, the harsh grassy notes of fresh chilies are not favored; they’re referred to in Thai as “green rank” or “men khiaao (เหม็นเขียว)”. Muslim curries often use fresh green chilies, tempering their vibrant, grassy taste with dry spices and thus shifting the flavor from bright and fresh to more subdued and earthy tones, resulting in a dish that is perceived to be layered, despite the burst of fresh chilies.
