- 350 g squid (ปลาหมึก)
- 5 fresh red Thai bird’s eye chili (phrik kee noo) (พริกขี้หนููแดง)
- 5 fresh green Thai bird’s eye chili (phrik kee noo) (พริกขี้หนูเขียว)
- 3 Chinese garlic (กระเทียมจีน)
- 1 coriander roots (รากผักชี)
- 1/2 teaspoon white peppercorns (พริกไทย) (S1)
- 1/2 cup fingerroot (krachai) (กระชาย) cut into thin juliennes
- 4 fresh peppercorns (พริกไทยอ่อน) about 2 tablespoon
- 1 fresh red long chili (phrik chee fa) (พริกชี้ฟ้าแดง)
- 1 fresh yellow chili (phrik leuang) (พริกเหลือง)
- 3 baby corn (ข้าวโพดอ่อน)
- 1/2 cup holy basil (ใบกะเพรา)
- neutral tasting cooking oil (น้ำมันพืช)
Seasoning Sauce
- 2 tablespoons oyster sauce (ซอสน้ำมันหอย)
- 2 tablespoons light soy sauce (ซีอิ๊วขาว)
- 1/4 cup water (น้ำเปล่า)
- 1/2 teaspoon granulated sugar (น้ำตาลทราย)
Filling
- 150 g minced shrimp meat (เนื้อกุ้งสับ)
- 150 g minced pork meat (เนื้อหมูบด)
- 50 g water chestnuts (แห้ว) diced (about 8 pcs)
- 1 Chinese garlic (กระเทียมจีน)
- 1 coriander roots (รากผักชี)
- 1/2 teaspoon white peppercorns (พริกไทย) (S1)
- 1/2 tablespoon oyster sauce (ซอสน้ำมันหอย)
- 1/2 tablespoon light soy sauce (ซีอิ๊วขาว)
- 1 teaspoon granulated sugar (น้ำตาลทราย)
Crispy Basil Leaves
- 1/2 cup holy basil (ใบกะเพรา)
- neutral tasting cooking oil (น้ำมันพืช)
ส่วนผสม
- ปลาหมึกกล้วย 8 ตัว ประมาณ 350 กรัม
- พริกขี้หนูเขียว 5 เม็ด
- พริกขี้หนูแดง 5 เม็ด
- กระเทียมกลีบใหญ่ 3 กลีบ
- รากผักชี 1 อัน
- พริกไทยเม็ด 1/2 ช้อนชา
- กระชายซอยบาง 1/2 ถ้วย
- พริกไทยสด 4 ก้าน
- พริกสดแดงเม็ดใหญ่ 1 เม็ด
- พริกเหลือง 1 เม็ด
- ข้าวโพดอ่อน 3 ฝัก
- ใบกระเพรา 1/2 ถ้วย
- น้ำมันพืชสำหรับผัด
ส่วนผสมปรุงรส
- น้ำมันหอย 2 ช้อนโต๊ะ
- ซีอิ๊วขาว 2 ช้อนโต๊ะ
- น้ำเปล่า 1/4 ถ้วย
- น้ำตาลทรายขาว 1/2 ช้อนชา
ส่วนผสมไส้
- เนื้อหมูบด 150 กรัม
- เนื้อกุ้งบด 150 กรัม
- แห้ว 50 กรัม ประมาณ 8 อัน
- กระเทียมกลีบใหญ่ 1 กลีบ
- รากผักชี 1 อัน
- พริกไทยเม็ด 1/2 ช้อนชา
- น้ำมันหอย 1/2 ช้อนโต๊ะ
- ซีอิ๊วขาว 1/2 ช้อนโต๊ะ
- น้ำตาลทรายขาว 1 ช้อนชา
ส่วนผสมใบกระเพรากรอบ
- ใบกระเพรา 1/2 ถ้วย
- น้ำมันพืชสำหรับทอด
Instructions
- clean the squid remove its skin and separate the tentacles.
ทำความสะอาดปลาหมึกโดยลอกหนังออกให้หมด และ ตัดหนวดออก - clean the insides as well and set aside.
เอากระดองปลาหมึกออก และ ล้างข้างในปลาหมึกให้สะอาด เสร็จแล้วพักเอาไว้ - start preparing the filling by pounding finely in a pestle and mortar the garlic, coriander root and white peppercorns. set aside.
โขลกรากผักชี กระเทียม และ พริกไทย ให้ละเอียด เสร็จแล้วพักเอาไว้ - using a heavy knife roughly mince the shrimp.
นำเนื้อกุ้งไปสับให้พอหยาบ ๆ - in a mixing bowl combine the pork meat, minced shrimp meat and coriander-garlic paste.
ผสมเนื้อกุ้ง เนื้อหมู และ กระเทียม รากผักชี ที่โขลกเอาไว้แล้วให้เข้ากัน - add oyster sauce.
ปรุงรสด้วยน้ำมันหอย - add light soy sauce.
ซีอิ๊วขาว - add sugar.
และ น้ำตาลทราย - add water chestnuts.
ใส่แห้วลงไป - mix the filings well.
ขย้ำให้ส่วนผสมทั้งหมดให้เข้ากันดี - loosely fill the squids with the filling.
นำส่วนผสมที่ได้ยัดใส่เข้าไปในตัวปลาหมึก โดยไม่ต้องให้แน่นมาก - close the openings with the tentacles and secure with a wooden tooth pick.
จากนั้นปิดตัวปลาหมึกด้วยหนวดปลาหมึก เสร็จแล้วกลัดด้วยไม้จิ้มฟันให้เรียบร้อย - score each squid 3-4 times, arrange them on a plate and place in a steamer.
บั้งปลาหมึกประมาณ 3 – 4 บั้ง และ นำไปนึ่งด้วยไปแรง - steam for 6-8 minutes on high heat or until done.
นึ่งประมาณ 6 – 8 นาที - discard the waters and slice the squids into 1.5cm (0.5″) slices, set aside.
พอปลาหมึกสุก หั่นเป็นชิ้น ๆ ประมาณ 1/2 นิ้ว เสร็จแล้วพักเอาไว้
<br> - you can make balls and steam any filling leftovers, set aside.
ถ้ามีใส้เหลือ ก็สามารถปั้นเป็นก้อน ๆ และ นำไปนึ่งก็ได้ - prepare the crispy basil leaves by heating oil in a wok and quick frying the leaves for couple of seconds.
ทำใบกระเพรากรอบ โดยนำใบกระเพราไปทอดในน้ำมันร้อน 2 – 3 วินาที - drain excess oil on a paper towel, set aside.
ตักขึ้นพักไว้ให้สะเด็ดน้ำมัน
<br> - in a pestle and mortar roughly pound the garlic, red and green bird’s eye chilies, coriander root and white peppercorns.
โขลกพริกขี้หนูแดง เขียว กระเทียม รากผักชี และ พริกไทยเม็ด ให้ละเอียด
<br> - place a wok on a medium heat, fry the garlic-chili paste in couple of tablespoon oil until fragrant.
ตั้งกะทะ ใส่น้ำมันให้ร้อน และ นำเครื่องที่โขลกเอาไว้แล้วไปผัดให้หอม - add wild ginger (krachai).
ใส่กระชาย - add red and yellow long chilies along with fresh peppercorns and continue stir frying.
ใส่พริกแดง พริกเหลือง และ พริกไทยสดลงไป
add some water to create steam.เติมน้ำเปล่าลงไป- add baby corns, and continue stir frying.
ใส่ข้าวโพดอ่อน และ ผัดต่อไปจนสุก - add all the ingredients of the seasoning sauce and continue stir frying.
ใส่ซอสปรุงรส - add the squids and mix well.
ใส่ปลาหมึกทึ่เตรียมไว้แล้วลงไป - add fresh basil leaves and continue stir frying for last 10 seconds.
ใส่ใบกระเพรา - turn off the heat.
ผัดทั้งหมดให้เข้ากัน - plate and garnish with crispy basil leaves.

Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.

Typically, in Central-style curries, different types of basil are not used together. In higher cuisine, it is an unstated – but understood – practice to avoid blending the definitive scents of various basils. A curry’s final herbal identity is intended to remain definitively with its basil: the citrus notes of holy basil; the spicy-woody and pungent flavor of tree basil; the tart fragrance of lemon basil; or the cooling anise sensation of Thai basil.
Curry of yellow chilies with whole quail, fresh turmeric and lemon basil (แกงเผ็ดนกกระทาพริกเหลืองสด; gaaeng phet nohk grathaa phrik leuuang soht)
Salty leading and sour-sweet to follow, this coconut-based gaaeng phet spicy curry might be made of chilies, but it is fruitier than it is spicy, and lighter than it is dense. Originally cooked with the meat of game birds, it retains a surprisingly light body that opens space for the birds to fly. The curry is tinted golden orange from a paste imbued with fresh yellow chilies and turmeric; it is perfumed with lemongrass and lemon basil leaves.
