Ingredients
- 1/2 kg minced shrimp meat (เนื้อกุ้งสับ)
- 2 coconut milk (หางกะทิ)
- 1 1/2 coconut cream (หัวกะทิ)
- 1 cup mung beans (ถั่วเขียว) roasted and roughly grounded
- 1 kg palm sugar (น้ำตาลมะพร้าว)
- 3 cups tamarind paste (น้ำมะขามเปียก)
- 2 cups light soy sauce (ซีอิ๊วขาว)
- 2 teaspoon sea salt (เกลือทะเล)
- 4-5 kaffir lime fruit (ลูกมะกรูด)
- 2 cups unsalted roasted shelled peanuts (ถั่วลิสงคั่ว) freshly roasted and roughly grounded
- 1 cup coriander leaves (ใบผักชี) roughly chopped
Roasted Aromatic Paste Ingredients
- 1/3 cup coriander roots (รากผักชี) roughly chopped
- 2 cups Thai garlic (กระเทียมไทย) unpeeled
- 1 cups shallots (หอมแดง) finely chopped
Fried Aromatic Paste Ingredients
- 1/2 coconut cream (หัวกะทิ)
- 2 cups shallots (หอมแดง) finely chopped
- 1 cup Thai garlic (กระเทียมไทย) roughly crashed, including the peels
- 2-3 tablespoon dried red long chili (phrik chee fa) (พริกชี้ฟ้าแห้ง) freshly roasted and ground
Serve with:
- fermented rice noodles (khanohm jeen) (ขนมจีน) เส้นขนมจีน ; sen khanohm jeen
- boiled chicken eggs (ไข่ไก่ต้ม)
- banana blossom (หัวปลี) soaked in acidic water to prevent blackening
- cooked vegetables (ผักต้ม) beans sprouts, water morning glory
- fried, batter fried or egg-batter fried vegetables (ผักทอด ผักชุบแป้งทอด หรือ ผักชุบไข่ทอด)

- น้ำมะขามเปียก ข้น ๆ 3 ถ้วย
- ซีอิ๊วขาว 2 ถ้วย
- เกลือ 2 ช้อนชา
- มะกรูด 5 ลูก
- ถั่วลิสงคั่วบดหยาบ 2 ถ้วย
- ผักชีไทยสับหยาบ 1 ถ้วย
ส่วนผสมเครื่องหอมคั่ว
- รากผักชี 1/3 ถ้วย
- กระเทียมไทย 2 ถ้วย
- หอมแดงซอยบาง 1 ถ้วย
ส่วนผสมเครื่องหอมเจียว
- หัวกะทิ 1/2 กิโลกรัม
- หอมแดงซอยบาง 2 ถ้วย
- กระเทียมไทย 1 ถ้วย
- พริกแห้งคั่วป่น 3 ช้อนโต๊ะ
ส่วนผสมเครื่องเคียงขนมจีน (เหมือด)
- ไข่ต้ม
- หัวปลีซอยบาง
- ผักลวก ถั่วงอก ถั่วฝักยาว ถั่วพลู ผักบุ้ง
- ผักชุปแป้งทอด ใบชะพลู ผักชีฝรั่ง และ อื่น ๆ ตามแต่ชอบ
Instructions
Method: Roasted Aromatic Pasteเตรียม เครื่องหอมคั่ว
- Roast coriander roots until fragrant
หั่นรากผักชีหยาบ ๆ ประมาณ 3 ช้อนโต๊ะ แล้วคั่วด้วยไฟอ่อน ๆ จนหอม - Add Thai unpeeled garlic
พอรากผักชีเริ่มส่งกลิ่นหอมออกมา ก็นำกระเทียมไทย ประมาณ 2 ถ้วยลงไปคั่วต่อด้วยกัน - Roast on low heat with constant stirring.
คั่วต่อไปเรื่อย ๆ - Because the shallots are faster to cook, add them when the garlic peel begins to get a golden color.
เนื่องจากว่ากระเทียมจะสุกช้ากว่าหอมแดง เราก็เอาหอมแดงมาลงคั่วเป็นอย่างสุดท้าย - Continue roasting until the garlic is soft and the shallots are done
ใส่หอมแดงซอยบาง ๆ ประมาณ 1 ถ้วย และคั่วให้หอม - In a mortar and pestle pound everything to a fairly fine paste, set aside.
นำเครื่องปรุงทั้งหมดที่คั่วมาเรียบร้อยแล้วมาโขลกด้วยกัน โขลกค่อนข้างละเอียด เสร็จแล้วพักไว้
Method: Fried Aromatic Pasteเตรียม เครื่องหอมเจียว
- Set a non stick saucepan over low heat and add coconut cream
นำหัวกะทิ 1/2 กิโลกรัมลงไปเคี่ยวในกระทะด้วยไฟอ่อน - Reduce the coconut milk with constant stirring to prevent burning. the coconut oil will start to float on top
ค่อย ๆ คนและเคี่ยวต่อไปเรื่อย ๆ แรก ๆ กะทิจะแตกมัน - continue to reduce the mixture until the white stuff coagulates and clear coconut oil floats to the surface.
เคี่ยวต่อไปเรื่อย ๆ จนกะทิจะกลายเป็นน้ำมันขิ้โล้ ใส ๆ (น้ำมันมะพร้าว) - use the oil in the saucepan to fry the rest of the ingredients. Start with the shallots, as they contain higher water content and will take longer to fry.
นำหอมแดงซอยบาง ๆ ประมาณ 2 ถ้วยมาลงผัดกับน้ำมันมะพร้าวที่ได้มาจากการเคี่ยวหัวกะทิ - on a very low heat with constant stirring fry until the shallots become transparent
เจียวต่อไปเรื่อย ๆ - Add crushed unpeeled Thai garlic
พอหอมแดงเริ่มมีสีเหลือง ก็ ใส่กระเทียมไทยที่โขลกพอแตก ประมาณ 1 ถ้วย ลงไปผัดด้วยกันต่อ - keep frying on low heat, stir often
คอย ๆ คนไปเรื่อย ๆ - Add dry chili powder
ใส่พริกแห้งคั่วป่นลงไป - Fry until both garlic and shallots looks crispy. <em>be careful not to burn</em> the mixture it will become bitter! Set aside.

Method: Combine the dishเมื่อทำเครื่องหอมทั้งสองชนิดเสร็จเรียบร้อยแล้ว เราก็มาทำน้ำพริกกันได้แล้ว
- Bring the coconut milk to a boil in a large pot over a medium heat. stir often to prevent burning
ใส่หางกะทิประมาณ 2 กิโลกรัมลงในหม้อแล้วตั้งไฟอ่อน ๆ ให้เดือด - Add roasted and ground golden beans
พอหางกะทิเดือดแล้วให้นำถั่วทองคั่วที่เตรียมไว้ ประมาณ 1 ถ้วยใส่ลงไป - cook the beans for about 10 minutes, stir often
เคี่ยวด้วยไฟอ่อน และค่อย ๆ คนไปเรื่อย ๆ เพื่อไม่ให้กะทิติดหม้อ - Add roasted aromatic mix
นำเครื่องหอมคั่วใส่ลงไปในหม้อ - mix well and bring to a boil
เคี่ยวต่อไปและคนไปเรื่อย ๆ - Add palm sugar
พอเดือดแล้วปรุงรสด้วย น้ำตาลมะพร้าว 1 กิโลกรัม - Add thick tamarind paste
น้ำมะขามเปียก 3 ถ้วย - Add light soy sauce
ซีอิ๊วขาว 2 ถ้วย - Add salt. It helps to bring out the flavors of any dish
เกลือป่นประมาณ 2 ช้อนชา ซึ่งเกลือจะช่วยเรียกรสชาติของอาหารให้ออกมามากขึ้น - Mix and boil everything together until you are sure that all the seasoning are evenly distributed and the palm sugar fully dissolved
เคี่ยวไปเรื่อย ๆ จนเครื่องปรุงทั้งหมดละลายเข้ากันดี - Add coconut cream
อย่าตกใจนะครับ ตอนนี้เราจะเพิ่มหัวกะทิลงไปอีก 1.5 กิโลกรัม - Mix well and bring to a boil (I know… I could use a larger pot)

ตักน้ำกะทิจากในหม้อมาผสมกับเนื้อกุ้งประมาณ 1/2 กิโลกรัมในถ้วย เพื่อที่เนื้อกุ้งจะได้ไม่จับตัวเป็นก้อน - When the shrimp are cooked, add the fried aromatic paste
เมื่อเนื้อกุ้งสุกแล้ว ในนำเครื่องหอมเจียวใส่ตามลงไป - Mix well and bring again to a boil
คนต่อไปจนเดือด - Add roasted and ground peanuts
ใส่ถั่วลิสงคั่วปดหยาบ ๆ ประมาณ 2 ถ้วยลงไป - Squeeze the juice out of 4-5 kafir limes. Add both juice and fruit
นำลูกมะกรูด 4-5 ลูกมาคั้นน้ำ เสร็จแล้วให้ใส่ลงไปในหม้อทั้งน้ำและลูก - Add chopped coriander leaves
ใส่ผักชีไทยสับหยาบ ๆ ประมาณ 1 ถ้วยลงไป

Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.
c1941 Old-Fashioned spicy curry of chicken with young chilies (แกงเผ็ดแบบโบราณอย่างคุณถนอม ปาลบุตร พ.ศ. 2484 ; gaaeng phet baaep bo:h raan)
This is a classical Siamese spicy curry that displays a spicy, salty and sweet flavor profile, and uses common curry ingredients such as pea eggplants and young green chilies with an interesting dry spice profile.
Perfumed Muslim-style Curry of Fresh Chilies with Beef (แกงเขียวหวานเนื้อทรงเครื่อง; Gaaeng Khiaao Waan Neuua Sohng Khreuuang)
The Indian and Muslim cuisines present distinct approaches to using dried spices in curries, both of which influence Siamese cuisine in different ways. Indian-inspired Siamese curries spotlight chilies for their vibrant color, fragrance, flavor and heat, while spices like cumin and coriander play a supporting role. The spices complement and temper the chilies’ intensity, creating a rounded, multi-layered flavor profile; nonetheless, the chilies remain the star ingredient, gently complemented by the spices.
Conversely, Muslim-influenced curries, such as massaman curry, prioritize spices over chilies. Spices like cardamom, nutmeg and mace take center stage, while the chilies provide subtle background heat rather than being the primary flavor. In these curries, the focus is on the rich, warm and complex aromas created by the blend of spices, which is a defining characteristic of many Muslim dishes.
Moreover, Siamese cuisine favors using rehydrated dried chilies in curries for their depth; this depth is highly appreciated, along with the complexity, and comparatively milder heat of the rehydrated dried chilies. As well, the harsh grassy notes of fresh chilies are not favored; they’re referred to in Thai as “green rank” or “men khiaao (เหม็นเขียว)”. Muslim curries often use fresh green chilies, tempering their vibrant, grassy taste with dry spices and thus shifting the flavor from bright and fresh to more subdued and earthy tones, resulting in a dish that is perceived to be layered, despite the burst of fresh chilies.
