Simmer the chicken in coconut milk until it is cooked. นำเนื้อไก่เคี่ยวกับกะทิให้สุก
Heat the pork fat over medium heat, and fry the curry paste until fragrant. ผัดเครื่องแกงกับน้ำมันหมู
Gradually add cooking liquids from the chicken, and continue frying until it incorporates into the curry. ค่อย ๆ เติมน้ำกะทิที่ได้จากการต้มไก่ลงไป และ ผัดรวมกัน
Keep stirring until a beautiful red oil floats on top. ผัดจนเครื่องแกงสุก
Continue this until all the liquids are mixed together, then add the cooked chicken. ผสมเครื่องแกงลงไปในน้ำกะทิและไก้ที่ต้มไว้แล้ว
Add shallots. ใส่หอมแดงลงไป
Add sultana raisins. ใส่ลูกเกดลงไป
Cook until the shallots are soft, and the curry thickens to the desired consistency. ต้มแกงต่อไปจนหอมสุกและน้ำแกงมีความข้น
Add fish sauce. ใส่น้ำปลาลงไป
Add palm sugar. ใส่น้ำตาลมะพร้าวลงไป
Add tamarind paste. ใส่น้ำมะขามเปียกลงไป
Squeeze bitter orange juice. ปีบน้ำส้มซ่าลงไป
Serve. เสริฟ
