Ingredients
- 2 cups glutinous rice (ข้าวสารข้าวเหนียว)
- 4 tablespoons Thai red pickling (limestone) solution (น้ำปูนแดง)
- 2 1/4 cups coconut cream (หัวกะทิ)
- 1 1/3 cups granulated sugar (น้ำตาลทราย)
- 1/2 teaspoon sea salt (เกลือทะเล)
- 3/4 cups Pandan juice from about 5 leaves
- 4 tablespoon white sesame seeds (งาขาว)

- ข้าวเหนียวเขี้ยวงู 2 ถ้วย
- น้ำปูนใส 4 ช้อนโต๊ะ
- หัวกะทิ 2 1/4 ถ้วย
- น้ำตาลทรายขาว 1 1/3 ถ้วย
- เกลือป่น 1/2 ช้อนชา
- น้ำใบเตยสด 3/4 ถ้วย ประมาณ 5 ใบ
- งาขาว 4 ช้อนโต๊ะ
Instructions
- soak the rice in water to which about 3 tablespoons of Thai red pickling lime solution were added for about 3 to 4 hours.
นำข้าวสารข้าวเหนียวไปแช่ในน้ำเปล่า กับ น้ำปูนใส 3 ช้อนโต๊ะ - this helps to rehydrate the rice and assure it would cook perfectly. the lime solution will help the grains to remain intact and wont break during the cooking process.
แช่ข้าวเหนียวไปประมาณ 3 – 4 ชั่วโมง การแช่ข้าวเหนียวจะทำให้เม็ดข้าวเหนียวจะไม่เละเวลาเคี่ยวกับน้ำตาล - wash the rice thoroughly and make sure to remove any remains of the pickling lime.
ล้างข้าวเหนียวในน้ำสะอาด จนหมดกลิ่นปูน - wrap the rice with a thin white cloth.
ห่อข้าวเหนียวในผ้าขาวบาง - steam the rice for 20-30 minutes, until done.
นำไปนึ่งด้วยไฟแรงประมาณ 20 – 30 นาทีจนสุก - transfer the steaming hot rice to a bowl with a cover, do not allow to cool down.
นำข้าวเหนียวที่นึ่งสุกแล้วและยังร้อนอยู่ออกใส่ในภาชนะที่มีฝาปิด - add 1 1/4 cups of coconut cream on top of the steaming hot rice.
เติมหัวกะทิ 1 1/4 ถ้วย - mix well allow each grain of rice to be coated with the coconut cream.
ผสมข้าวเหนียวร้อน ๆ กับกะทิให้เข้ากัน - cover the bowl and leave to rest for an hour or so, allowing the rice to soak in the coconut cream as they cool down.
ปิดฝาและพักไว้ประมาณ 1 ชั่วโมงเพื่อให้กะทิซึมเข้าไปในเม็ดข้าวเหนียว - in the mean time, prepare the pandan juice by pounding 5 fresh pandan leaves with 3/4 cup of water.
นำใบเตยหั่นหยาบ ๆ ลงไปโขลกในครกให้ละเอียด และ เติมน้ำเปล่า 3/4 ถ้วย ใส่ในผ้าขาวบาง - strain the juice through a white cloth and set aside.
คั้นน้ำใบเตย เสร็จแล้วพักเอาไว้ - when the rice is ready, add the remaining 1 cup of coconut cream to a brass wok.
นำกระทะทองเหลืองตั้งไฟกลาง จากนั้นใส่หัวกะทิ 1 ถ้วยลงไป - add granulated sugar.
ใส่น้ำตาลทรายขาว 1 1/3 ถ้วยลงไป - add salt.
เติมเกลือป่น 1/2 ช้อนชาลงไป - add 1 tablespoon of Thai red pickling lime solution.
ใส่น้ำปูนใส 1 ช้อนโต๊ะ - stir all the ingredients together over medium heat.
คนกะทิไปเรื่อย ๆ - stir constantly until the solution turns into a transparent syrup.
หลังจากคนกะทิไปประมาณ 5 นาที กะทิจะกลายเป็นน้ำเชื่อมใส ๆ - add the rice.
ใสข้าวเหนียวที่ผสมกับกะทิเอาไว้แล้วลงไป - over medium heat stir constantly to the same direction, make sure the rice is not sticking to the wok.
กวนข้าวเหนียวในกระทะไปเรื่อย ๆ โดยกวนไปในทิศทางเดียวกัน - gradually reduce the liquids until it become quite thick syrup.
กวนจนเหลือน้ำขลุกขลิกก้นกระทะเพียงเล็กน้อย - add the pandan juice.
ใสน้ำใบเตยลงไป - mix well and keep stirring.
คนให้ส่วนผสมทั้งหมดเข้ากันดี - keep stirring until the rice dries up and the color turns transparent vivid green. do not dry it to much or it will become tough.
คนไปเรื่อย ๆ จนข้าวเหนียวเกือบแห้ง ออกสีเขียวใส ๆ แต่อย่าให้ข้าวเหนียวแห้งมากนัก เพราะว่า ถ้าเย็นแล้วจะทำให้ข้าวเหนียวแข็ง - transfer the rice to a 1″ (2.5 cm) baking pan.
เทข้าวเหนียวใส่ลงในถาดสูงประมาณ 1 นิ้ว - smooth the surface.
ปาดหน้าข้าวเหนียวให้เรียบ - over low heat roast white sesame until golden and fragrant.
คั่วงาขาวด้วยไฟอ่อน ๆ จนเหลืองหอม - sprinkle the roasted sesame over the top.
โรยงาขาวบนข้าวเหนียว - allow to cool down completely before serving.
ทิ้งข้าวเหนียวแก้วให้เย็น - serve.

Pandan Flavored Rice Flour Droplets in Sweetened Coconut Cream Syrup

Thai desserts are usually made from common ingredients and therefore very popular. However, it was only during the 17th century that desserts and sweets actually became part of everyday meals. In the old days, they were served only at auspicious occasions and ceremonies.
During wedding ceremonies, for example, four kinds of sweets are usually served, collectively known as “the four plates dessert” (ขนมสี่ถ้วย ; khanohm see thuay). The ancient Thai expression “To eat four cups of dessert” (กินสี่ถ้วย ; gin see thuay ) used in the central region of the kingdom as an idiom referring to a wedding banquet.

Seasoned rice dishes have been a staple of rice-consuming societies almost since the first grains were cultivated. Adapted according to local resources, traditions and individual preferences, seasoned rice dishes are relished and savored across all walks of life. Within Siamese society, these dishes offer insight into the flavor instincts and eating habits across all demographics, revealing which food items were locally available and valued.
In this delicious seasoned rice recipe from the kitchens of the daughter of King Chulalongkorn, Princess Yaovabha Bongsanid (พระเจ้าบรมวงศ์เธอ พระองค์เจ้าเยาวภาพงศ์สนิท) (1884-1934), the Princess uses a variety of common preserved and inexpensive ingredients, clearly drawing inspiration from the cuisine of the Central Plains with nods to the rural and coastal living atmosphere.

The first reference to sohm choon as a dessert appears in in the early 1800s, in the culinary poetry of King Rama II gaap heh chohm khreuuang khaao waan (กาพย์เห่ชมเครื่องคาว – หวาน). The poetry was sung during the royal barge’s procession, and this verse refers to sohm choon as a dish made of lychees. A closer look at other foods that are mentioned in the verse also reveals other dishes that are clearly of Chinese origin, such as boiled pork spleen (dtohm dtap lek ต้มตับเหล็ก), steamed bird’s nests (rang nohk neung รังนกนึ่ง) and persimmons (luuk phlap ลูกพลับ).
It is believed that this dish was introduced to the Siamese royal cuisine in the middle of the seventeenth century by Portuguese traders. Later, along with other egg yolk-based golden sweets like the golden drops (thong yot ทองหยอด), golden flowers (thong yip ทองหยิบ) and golden threads (foi thong ฝอยทอง), these royal desserts were passed to commoners outside the court.
For the marzipan filling I am using, beside the mung beans, both the flesh and the water of fragrant young coconuts. It gives a rich, sweet and almost nutty flavor which works perfectly with the silky texture of the mung beans and the creamy golden egg yolks coating.
