It is believed that this dish was introduced to the Siamese royal cuisine in the middle of the seventeenth century by Portuguese traders. Later, along with other egg yolk-based golden sweets like the golden drops (thong yot ทองหยอด), golden flowers (thong yip ทองหยิบ) and golden threads (foi thong ฝอยทอง), these royal desserts were passed to commoners outside the court.
For the marzipan filling, I am using, besides the mung beans, both the flesh and the water of fragrant young coconuts. It gives a rich, sweet, and almost nutty flavor which works perfectly with the silky texture of the mung beans and the creamy golden egg yolks coating.
The art of making Thai desserts require a great measure of both patient and precision, The process is meticulously detailed and at times it feels more like a chemistry experiment rather than cooking.

Ingredients

- 500 g mung beans (ถั่วเขียว) dehusked
- 1 kg semi-matured coconut (มะพร้าวทึนทึก)
- 2 cups young coconut water (น้ำมะพร้าวอ่อน)
- 800 g granulated sugar (น้ำตาลทราย)
- 1 teaspoon cassava flour (แป้งมัน)
syrup
- 1 1/2 Kg granulated sugar (น้ำตาลทราย)
- 1 duck eggshell (เปลือกไข่เป็ด)
- 1/2 duck egg whites (ไข่ขาวของไข่เป็ด)
- 1 liter water (น้ำเปล่า)
- 2 pandan leaves (ใบเตย)
- Ingredients – Yolk Coating
- 20 duck egg yolk (ไข่แดงของไข่เป็ด)
Instructions
Marzipan Filling (วิธีทำไส้ถั่วมะพร้าวหอม)
- Soak 500gr of dry Dehusked mung bean in water overnight. Change the water few times to remove unwanted odors. ล้างถั่วทองให้สะอาด จากนั้นแช่น้ำค้างคืน 1 คืน ระหว่างนี้ให้เปลี่ยนน้ำอีก 2-3 ครั้ง เพื่อให้หมดกลิ่นถั่ว
- Steam the beans over high heat.นำถั่วทองไปนึ่งในหม้อนึ่งด้วยไฟแรง
- Steam for about 30-40 minutes or until the beans are soft.นึ่งประมาณ 30-40 นาทีจนถั่วสุก
- While the beans are steaming, select a fresh young coconut, the type I use is in between very young coconut and mature coconut, the shell is brownish and the meat is somewhat firmer than the jelly texture of very young coconut, but still quite soft. ระหว่างที่นึ่งถั่ว ให้เลือกมะพร้าวทึนทึกมาสัก 2-3 ลูก
- Crack the coconut open.เฉาะมะพร้าวออก
- Save the coconut water and set aside.เก็บน้ำมะพร้าวเอาไว้
- Grate the coconut flesh using coconut greater and set aside.ขูดเนื้อมะพร้าวให้ได้ 1 กิโล
- When the beans are cooked, scope a spoonful of them at a time, leaving the rest in the steamer to keep hot.ตักถั่วทองจากหม้อนึ่งที่ละนิดลงไปโขลกในครก (ระหว่างนี้ให้เก็บถั่วให้อุ่นอยู่ตลอดเวลา เพราะว่าจะทำให้โขลกง่าย)
- In a pestle and mortar pound the cooked beans into very smooth paste, avoid leaving any beans pieces because it will affect the finished product texture.โขลกถั่วทองให้ละเอียด ๆ
- Add equal amount of grated coconut and keep pounding.ใส่มะพร้าวขูดลงไปโขลกกับถั่ว โดยใช้จำนวนให้เท่า ๆ กันกับถั่วที่โขลกอยู่
- Pound the beans and the coconut together.โขลกให้เข้ากัน โดยไม่ต้องโขลกเนื้อมะพร้าวให้ละเอียดมากนัก
- Repeat the process in batches until the entire amount of mung beans has been incorporated with equal amount of coconut flesh, and set aside.
- Important: keep the beans warm. It is essential that you pond them while they are still warm for best results.ทำแบบนี้ต่อไปเรื่อย ๆ จนหมดถั่วทอง
- Add sugar.ใส่น้ำตาลทรายลงไป 800 กรัม
- Add flour .ใส่แป้งมัน 1 ช้อนชา ลงไป
- Prepare a brass wok and a wooden paddle.เตรียมกะทะทองเหลือง และ ไม้พาย ให้พร้อม
- Cover the wok with a fine white cloth and strain the coconut water through the cloth into the wok.กรองน้ำมะพร้าวด้วยผ้าขาวบาง แล้วใส่ลงในกะทะทองเหลือง
- Add the sugar and beans mixture to the coconut water in the wok.ใส่ถั่วทองที่โขลกมาแล้ว และ น้ำตาลที่เตรียมเอาไว้ลงไป
- Turn on heat to low.ตั้งกะทะทองเหลืองด้วยไฟอ่อน
- Mix all the ingredients together using the wooden paddle.ผสมส่วนผสมทั้งหมดให้เข้ากัน
- You should stir constantly without stopping even for a minute, making sure that the mixture is not sticking to the bottom of the wok. กวนถั่วด้วยไม้พายไปเรื่อย ๆ ระวังอย่าให้ถั่วติดก้นกะทะ
- As the mixture is cooking it thickens, do not stop stirring! กวนต่อไปเรื่อย ๆ จนเนื้อถั่วเริ่มแห้งและจับตัวเป็นก้อน
- After about 90 minutes of constant stirring you will know that the marzipan is ready when you can roll up a ball without it get sticking to your fingers. Turn off the heat. เมื่อกวนไปได้ประมาณ 90 นาที จนถั่วสามารถที่จะปั้นเป็นก้อนได้โดยไม่ติดนิ้ว แสดงว่าใช้ได้แล้ว
- Roll the marzipan into even size elongated balls, of about 4cm (1.5″). set aside.ปั้นถั่วเป็นรูปเม็ดขนุนขนาดประมาณ 4 ซม จนหมด
Method (วิธีทำเตรียมไข่แดง)
- Separate the egg yolks from the egg whites. Make sure to remove all the egg whites leaving only uncontaminated yolks.ล้างไข่เป็ดให้สะอาด จากนั้นตอกไข่ใส่กะละมัง ให้แยกไข่แดง และ ไข่ขาวออกจากกันอย่างเบามือ
- Squeeze the yolks through a fine white cloth to get rid of the yolk’s membranes.กรองไข่แดงด้วยผ้าขาวบาง
- Set aside the resulting smooth yolk cream.เสร็จแล้วพักเอาไว้
Method (วิธีทำน้ำเชื่อม)
- In a brass wok place egg shell and half duck egg white.เอาเปลือกไข่เป็ด และ ไข่ขาว ใส่ลงในกะทะทองเหลือง
- Using your hands massage the egg white and egg shell with granulated sugar.เติมน้ำตาลทรายขาว 1 1/2 กิโล ลงไป และนวดให้เข้ากัน
- Add water and turn on the heat, mix well. Once the sugar has been completely dissolved stop mixing!เติมน้ำเปล่า 1 ลิตร จากนั้นนำกะทะตั้งไฟโดยใช้ไฟอ่อน ใช้ไม้พายค่อย ๆ คนจนน้ำตาลทรายละลายหมด
- Bring the syrup to a boil.เร่งไฟให้แรงจนน้ำเชื่อมเดือด
- Skim off the white scum.ช้อนไข่ขาวที่ลอยหน้าทิ้งไป
- Stain the syrup through a fine white cloth.กรองน้ำเชื่อมที่ได้ด้วยผ้าขาวบาง
- Discard any residues.
- Return the syrup back to the brass wok which has been cleaned.ล้างกะทะให้สะอาด แล้วใส่น้ำเชื่อมที่กรองเอาไว้ลงไป
- Place a wrap made from pandan leaves and bring the syrup to a boil.ใส่ใบเตยลงไป
- Once the syrup is boiling it is ready for use. Remove the pandanus leaves.รอให้น้ำเชื่อมเดือด
Method (วิธีทำหยอดและชุบเม็ดขนุน)
- When the syrup come to a boil, Turn off the heatเมื่อน้ำเชื่อมเดือดได้ที่แล้ว ให้ปิดไฟ
- With the heat now turned off, dip each marzipan ball in the egg yolk cream and drop it into the hot syrup.นำเอาเม็ดถั่วที่ปั้นเอาไว้ ไปจุ่มลงในไข่แดง
- Repeat until the wok is full with floating yolk coated marzipan balls.ค่อย ๆ ใส่ลงไปในกะทะจนเต็ม
- Turn on the heat to high and bring to a quick boil.เปิดไฟแรง
- After couple of minutes, the yolks will be cooked and set.ต้มเม็ดขนุนต่อไปในน้ำเชื่อมประมาณ 2-3 นาทีจนไข่แดงสุก
- Scoop the cooked dessert from the syrup.ช้อนเม็ดขนุนขึ้นมา
- Strain from extra syrup and leave to cool, turn off the heat and repeat stage 1-6 until all the amount of marzipan balls are coated and cooked.รอให้สะเด็ดน้ำเชื่อม – ปิดไฟ ใส่เม็ดขนุนลงไป เปิดไฟ ช้อนขึ้นมา ทำอย่างนี้ต่อไปเรื่อย ๆ จนหมด
- serve at room temprature.เสร็จ
Sohm Choon Fruit Dessert of Lychee, Green Mango, Young Ginger in Jasmine, Bitter Orange, and Pandan-Scented Sweet and Salty Syrup, Topped with Grilled Shallots, Peanuts and Roasted Coconut
(ส้มฉุน ; sohm choon)
The first reference to sohm choon as a dessert appears in in the early 1800s, in the culinary poetry of King Rama II gaap heh chohm khreuuang khaao waan (กาพย์เห่ชมเครื่องคาว – หวาน). The poetry was sung during the royal barge’s procession, and this verse refers to sohm choon as a dish made of lychees. A closer look at other foods that are mentioned in the verse also reveals other dishes that are clearly of Chinese origin, such as boiled pork spleen (dtohm dtap lek ต้มตับเหล็ก), steamed bird’s nests (rang nohk neung รังนกนึ่ง) and persimmons (luuk phlap ลูกพลับ).
Known as Khanohm faawy (ขนมฝอย) or Khanohm handtraa, this sweet or savory packet can be a dessert or a snack. The dessert has a sweet filling of silky mung beans and a coconut marzipan-like paste, while the snack’s savory filling consists of shrimp and pork minced and seasoned with garlic, coriander root and white peppercorns. Each is theatrically wrapped in a striking nest of skillfully crafted duck’s egg thread.

Thai desserts are usually made from common ingredients and therefore very popular. However, it was only during the 17th century that desserts and sweets actually became part of everyday meals. In the old days, they were served only at auspicious occasions and ceremonies.
During wedding ceremonies, for example, four kinds of sweets are usually served, collectively known as “the four plates dessert” (ขนมสี่ถ้วย ; khanohm see thuay). The ancient Thai expression “To eat four cups of dessert” (กินสี่ถ้วย ; gin see thuay ) used in the central region of the kingdom as an idiom referring to a wedding banquet.
