Gaeng som recipe: Sour curries are without doubt one of Thai cuisine’s all-time favorites, free from foreign influence, and with many regional variations they present a complex balance of four flavors while using only a few ingredients, all find a pleasing harmony in one dish.

There are the sourness of the tamarind paste, the saltiness of the fermented shrimp paste and fish sauce, the natural sweetness of the prawns and the vegetables and of course the peppery heat from the chilies. This easy curry paste is as rich as it is simple; the flavor offers a world of depth in a truly innovative combination of flavors.

Today I am preparing sour curry (gaeng som recipe) the Mon style  (gaeng som maawn gra jiiap goong) which utilizes tamarind paste and Rosella leaves as the sour components and uses curry paste which is made of chilies (dry and fresh), shallots, wild ginger, salt, and fermented fish paste.

After pounding the curry paste fine and smooth; I add to it cooked prawns meat and the golden tomalley to enrich the flavors and also to thicken the broth. Once the paste is ready, all that is left to do is to cook the curry paste for few minutes in a pot with boiling water, to season it to a sour leading and salty-sweet to follow flavor balance. Once the desired flavor balance is achieved we can add the vegetables and precooked shrimp and finish the dish with roughly chopped fresh Rosella leaves.

There are other versions of sour curries, all of which are very tasty and satisfying (especially when served alongside a plate of hot and steamy fragrant white rice and crispy omelette), which makes it necessary for me to revisit other recipes of sour curry in the future entries to Thaifoodmaster.com

Ingredients
  

  • 350 g tiger prawn (กุ้งกุลาดำ) head-on / shell-on / tail intact
  • 4 cups water (น้ำเปล่า)
  • 4 tablespoons tamarind paste (น้ำมะขามเปียก)
  • 1 tablespoon palm sugar (น้ำตาลมะพร้าว)
  • 1 cup yard long beans, cut into 1.5″ (4cm) segments
  • 150 g green okra (กระเจี๊ยบเขียว) cut into 1″ (2.5cm) segments
  • 1 cup roselle leaves roughly chopped.

Curry Paste

  • 4 dried red long chili (phrik chee fa) (พริกชี้ฟ้าแห้ง) deseeded
  • 4 fresh red long chili (phrik chee fa) (พริกชี้ฟ้าแดง) deseeded
  • 1 teaspoon sea salt (เกลือทะเล)
  • 1/4 cup krachai wild ginger, sliced
  • 1/2 cup shallots (หอมแดง)
  • 1 tablespoon Mon style fermented shrimp paste (kapi maawn) (กะปิมอญ)
  • 1/4 cup tiger prawn (กุ้งกุลาดำ) cooked
  • tiger prawn tomalley (มันกุ้งกุลาดำ)

ส่วนผสม

  • กุ้งก้ามกราม หรือ กุ้งแชบ๊วย ตัวโตๆ 350 กรัม ประมาณ 8 ตัว
  • น้ำเปล่า 4 ถ้วย
  • น้ำมะขามเปียกข้น ๆ 4 ช้อนโต๊ะ
  • น้ำตาลมะพร้าว 1 ช้อนโต๊ะ
  • ถัวฝักยาวหั่นยาวประมาณ 4 ซม. 1 ถ้วย
  • ลูกกระเจี๊ยบขาว 150 กรัม ประมาณ 10 ฝัก หั่นเฉียงยาว 2.5 ซม
  • ใบกระเจี๊ยบแดง ซอยหยาบ 1 ถ้วย

ส่วนผสมเครื่องแกง

  • พริกแห้งเม็ดใหญ่แกะเมล็ดออก 4 เม็ด
  • พริกชี้ฟ้าแดง 4 เม็ด
  • เกลือป่น 1 ช้อนชา
  • กระชายซอยบาง ๆ 1/4 ถ้วย
  • หอมแดงซอยบาง ๆ 1/2 ถ้วย
  • กะปิมอญ 1 ช้อนโต๊ะ ถ้าไม่มีใช้กะปิธรรมดา 1/2 ช้อนโต๊ะแทนก็ได้
  • เนื้อกุ้งสุกสับละเอียด 1/4 ถ้วย
  • มันกุ้ง แล้วแต่ปริมาณที่จะได้จากหัวกุ้ง

Instructions
 

  • Prepare the prawns. Discard the legs. Peel and devein. Do not throw away the shells or the heads. Briefly and lightly, cook the prawns in boiling water for 10-15 seconds until only 60% done. Remove them immediately from the pot and set aside.
    เตรียมกุ้ง แกะหัว แกะเปลือกออก ผ่าหลังเอาเส้นดำออก ล้างน้ำให้สะอาด จากนั้นนำหม้อใส่น้ำเปล่าตั้งไฟแรงให้เดือด เมื่อน้ำเดือดนำกุ้งลงไปลวกให้สุกประมาณ 60% เสร็จแล้วพักเอาไว้
  • In the same water cook prawns heads until cooked. Set aside and do not discard the water. It will be the base for the curry broth.
    นำเอาหัวกุ้งลงไปลวกในน้ำเดือดให้สุก เสร็จแล้วพักเอาไว้ (น้ำที่ได้จากการลวกกุ้ง และ หัวกุ้ง ให้เก็บเอาไว้ด้วย)
  • Soak the deseeded dry chilies in hot water until soften.
    แช่พริกแห้งในน้ำอุ่นจนนุ่ม
  • In a pestle and mortar pound the chilies with salt as an abrasive.
    นำเอาพริกแห้งที่แช่น้ำจนนุ่มแล้วลงไปโขลกกับเกลือป่น
  • Add fresh chilies and wild ginger, and pound to a smooth paste.
    ใส่กระชายและพริกชี้ฟ้าแดงลงไป แล้วโขลกต่อไปให้ละเอียด
  • Add chopped shallots.
    เติมหอมแดงซอยลงไป
  • Pound everything to a smooth and homogeneous paste.
    โขลกส่วนผสมทั้งหมดให้ละเอียด
  • Squeeze the heads to release the meat and tomalley and add it to the curry paste.
    บีบมันกุ้งจากหัวกุ้งออกให้หมด แล้วใส่ลงไปในครก
  • Chop 3 prawns to get about 1/4 cup of meat and add it to the curry paste.
    นำกุ้งที่ลวกไว้แล้ว 3 ตัวมาสับให้ได้เนื้อกุ้งประมาณ 1/4 ถ้วย แล้วใส่ลงไปในครก
  • Add 1 tablespoon of fermented fish paste (or fermented shrimp paste).
    เติมกะปิมอญ 1 ช้อนโต๊ะลงไป
  • Pound all the ingredients into a smooth and homogeneous paste.
    โขลกส่วนผสมทั้งหมดให้ละเอียดเป็นเนื้อเดียวกัน
  • Bring the water in which the prawns and the prawn’s heads were cooked in to a fast boil, and add the curry paste.
    นำน้ำที่ได้จากการลวกกุ้งและหัวกุ้งตั้งไฟแรงให้เดือดจัด เมื่อน้ำเดือดจัดแล้วใส่เครื่องแกงลงไป
  • Mix well.
    คนให้เข้ากัน
  • Cook for about five minutes on medium high heat until the paste is cooked.
    ต้มต่อไปประมาณ 5 นาทีโดยใช้ไฟค่อนข้างแรงจนน้ำแกงเริ่มข้นขึ้น
  • Season with thick tamarind paste.
    ปรุงรสด้วยน้ำมะขามเปียก
  • Add palm sugar. Depends on the saltiness of the fermented shrimp paste you use, you might need to add fish sauce at this stage; mine was salty enough so I skipped it…
    เติมน้ำตาลมะพร้าวลงไป ชิมรสชาติให้ได้สามรส โดยให้รสเปรี้ยวนำ เค็ม และ หวานตาม (สามารถเติมน้ำปลาได้ถ้าชอบเค็ม)
  • Add yard long beans.
    ใส่ถั่วฝักยาวลงไป
  • Let the yard long beans to cook for couple of minutes.
    ต้มถั่วฝักยาวต่อไปประมาณ 2 นาที
  • Add okra slices.
    ใส่ลูกกระเจี๊ยบขาวลงไป
  • Cook the okra for about two minutes, do not overcook.
    ต้มลูกกระเจี๊ยบขาวต่อไปอีก 2 นาที (อย่าต้มนานเพราะว่าจะทำให้ยางของลูกกระเจี๊ยบออกมามากไป)
  • Lower the heat and add the half cooked prawns.
    ลดไฟลง และ เติมกุ้งที่ลวกเอาไว้แล้วลงไป
  • Cook until the prawns are fully done.
    ต้มต่อไปจนกุ้งสุกดี
  • Add chopped rosella leaves.
    ใส่ใบกระเจี๊ยบแดงลงไป
  • Let the rosella leaves to soften before serving.
    ต้มต่อไปอีกสัก 1 นาทีให้ใบกระเจี๊ยบแดงนุ่มและมีรสเปรี้ยวออกมา เป็นอันเสร็จ
  • Serve.
    ตักใส่ถ้วยเสริฟ
