Ingredients
  • 5 large Tiger prawns (1/2 cup of meat)
  • 2 Steamed mackerels (1/2 cup of meat)
  • 1 cup Lemongrass, thinly sliced
  • 1/4 cup Young ginger juliennes
  • 1 cup Shallots, sliced
  • 1 tablespoon Kaffir lime zest
  • 2 tablespoons small Bird’s eye chilies, bruised
  • 3 tablespoons green and red Bird’s eye chilies, thinly sliced
  • 2 tablespoons Karen chilies, thinly sliced
  • 1 tablespoon Long fresh yellow chili pepper, thick-sliced
  • 1 tablespoon Long fresh red chili pepper, thick-sliced
  • 1/3 cup Coriander leaves
  • 1 tablespoon Long fresh yellow and red chili peppers juliennes, for garnish
  • 2 tablespoons Kaffir lime leaves, hair-thin julienned
  • Fermented fish innards dressing
Fermented fish innards base
  • 1 1/2 cups Fermented fish innards (about 400ml)
  • 7 Dry long red chilies
  • 2 Large Smoked-dry fish (about 1 cup)
  • 1/2 cup Water
  • 1/2 cup Shallots, bruised
  • 5 Stalks Lemongrass
  • 1 cup Galangal
  • 1 cup Fingerroot (Krachai)
  • 7-8 Coriander roots
  • 1/2 cup Kaffir lime leaves
  • 2 Pandan leaves
  • 1/4 cup Fresh bird’s eye chilies
  • Charcoals and grated coconut (leftovers from coconut cream extraction) for smoking
Fermented fish innards dressing
  • 6 tablespoons Fermented fish innards base
  • 1 teaspoon Palm sugar
  • 2 tablespoons Fish sauce
  • 1/2 tablespoon Tamarind paste
  • 2 tablespoons Lime juice
  • 2 1/2 tablespoons Kaffir lime juice
Serve with
  • Assortment of fresh vegetables such as fresh small eggplants, young Hog plum tree leaves (magaawk paa มะกอกป่า), young guttiferae tree leaves (cha muaang, ชะมวง), banana blossom, cucumber, stink beans, yardlong beans and rose apple.
Method
Prepare the fermented fish innards base
