Yellow sour curry (gaaeng leuuang, แกงเหลือง) is considered a comfort food for the people of Thailand’s southern region. Lavish amounts of fresh turmeric give this spicy, sour and salty curry its rich yellow tint, as well as its earthy aroma and a pleasantly bitter taste. The curry also contains generous portions of the southern dark fermented shrimp paste, resulting in a cloudy, ochre-colored dish.

Ingredients
  • 1 medium size Sea Bass (about 400gr)
  • 3 cups Lotus stems, cut into 4 cm pieces
  • 2 slices Dry Asam Gelugur (garcinia atroviridis) (Som Khaaek ส้มแขก)
  • 1 cup Southern Sour yellow curry paste
  • 1 teaspoon Palm Sugar
  • 3 tablespoons Fish sauce
  • 4 tablespoons Tamarind Paste
  • Salt, Pinch of
  • Lime juice, as needed
  • 5 cups Water
For the Southern Sour Yellow Curry Paste
  • 10 pcs Dry bird’s eye chilies
  • 6 dry Karen's chili pepper (a spicier variety of bird’s eye chili)
  • 10 fresh birds eye chilies
  • 1/2 teaspoon Salt
  • 1/4 cup Thai garlic, peeled
  • 1/2 cup Shallots, roughly chopped
  • 1 pcs of turmeric (about 9 cm in length)
  • 4 tablespoons Fermented shrimp paste (kapi)
Method
  1. Prepare the curry paste ingredients: peel the shallots and garlic, and scrape the peel of the fresh turmeric. Use both fresh and dry chilies, preferably of different varieties to create a more complex chili flavor, hat and aroma.   12. A couple of minutes later, add the thicksliced fish, ensuring that the fish is at room temperature.
