Rice noodles (khanohm jeen), which are served with sweet and sour pineapple, pounded fluffy dry shrimp powder, young ginger, sliced garlic and bird’s eye chilies, and seasoned with sugar, fish sauce and lime according to taste. Ingredients
  • Fermented rice noodles
  • Jaaeng laawn in coconut cream
  • Jaaeng laawn bping
  • Pounded dry shrimp
  • Pineapple, cut into small pieces (preferably Thai Si-Racha variety)
  • Pomelo, separated into chunks.
  • Salacca, cut into small threads
  • Young ginger, thinly-cut julienned
  • Garlic, thinly sliced
  • Kaffir lime leaves, hair-thin julienned
  • Boiled eggs
  • phrik naam bplaa (Chili and Fish Sauce)
  • Lime or green mandarin orange
  • Granulated sugar
For Making Jaaeng laawn bping
  • 1 cup Clown featherback fish meat
  • 2 tablespoons Fish sauce
  • 1/4 cup Coconut cream
Curry paste for Jaaeng laawn bping
  • 2 Large dry chilies
  • 2 tablespoons Lemongrass
  • 2 tablespoons Coriander roots
  • 2 tablespoons Garlic
  • 2 tablespoons Shallots
  • 4 tablespoons Grated fresh coconut
  • 1 teaspoon Salt
  • 1 teaspoon Ground white peppercorns
For Making Jaaeng laawn
  • 1 cup Clown featherback fish meat
  • 1 1/2 Coconut cream
  • 1 teaspoon Salt
  • 1 teaspoon Fresh turmeric
Curry paste for Jaaeng laawn
  • 2 tablespoons Garlic
  • 2 tablespoons Fresh Turmeric
  • 1 teaspoon Salt
  • 2 teaspoon Ground white peppercorns
Method

Making Grilled Curried Fish Cakes
