Our khao soi recipe takes us back in time to the mid-19th century. The trade caravans were traversing the jungles of northern Thailand, winding along the ancient routes between India and China. Those long caravans were carrying a wealth of exotic goods, trailing the rich aromas of spices and the sweet scent of opium as they passed.

The men in these caravans, which usually consisted of between fifty and one hundred mules, would have been Yunnanese Muslim Chinese. The Yunnanese dominated the trade routes at that time, and began to settle in Chiang Mai and the main towns of north Thailand.
The Yunnanese, or the Ho people (จีนฮ่อ) as they were generally known, referred to themselves as ‘Haan Jeuu Yen’ (หานจื้อเย่น) and ‘Yuunnaan Yuuh’ (ยูนนานเย่อ). They established settlements, built mosques and opened halal restaurants where fellow Muslim traders could spend the night indoors and exchange the latest information and news with other caravan traders over a cooked halal dinner.
Khao soi is believed to have been introduced into northern Thai cuisine by the Ho people at those eateries.

- 4 chicken drumstick (น่องไก่) about 600gr
- 4 cups coconut milk (หางกะทิ)
- 2 cups coconut cream (หัวกะทิ)
- 3 tablespoons light soy sauce (ซีอิ๊วขาว)
- 1 tablespoon dark soy sauce (ซีอิ้วดํา)
- flat wheat flour egg noodles (เส้นข้าวซอย) about 50-75 gr for each serving
- neutral tasting cooking oil (น้ำมันพืช)
Ingredients – Khao Soi curry paste
- 10 dried red long chili (phrik chee fa) (พริกชี้ฟ้าแห้ง) roasted to 40% char and used dry
- 1 tablespoon red cardamom (chau go:h) (ชะโก)
- 2 tablespoons coriander seeds (malet phak chee) (เมล็ดผักชี) (S2)
- 3 tablespoons ginger (ขิง)
- 4 tablespoons shallots (หอมแดง)
- 4 pieces coriander roots (รากผักชี)
- 1 tablespoon fresh turmeric (ขมิ้นชัน) about 10 thin slices
- 1 tablespoon sea salt (เกลือทะเล)
- 1/2 tablespoon curry powder (ผงกะหรี่)
- 1/2 tablespoon Khao Soi curry spice mix (เครื่องเทศผสมสำหรับข้าวซอย)

- 3 cloves Thai garlic (กระเทียมไทย) medium size
- 4 tablespoon neutral tasting cooking oil (น้ำมันพืช)

- พริกแห้งเม็ดใหญ 10 เม็ด แกะเมล็ดออก
- เม็ดชะโก 1 ช้อนโต๊ะ ประมาณ 2 ลูก (ชะโกมีหลายชื่อ เช่น กระวานดำ เฉาก๊วยจี๊ เป็นต้น)
- ลูกผักชี 2 ช้อนโต๊ะ
- ขิงแก่ซอย 3 ช้อนโต๊ะ
- หอมแดงลูกเล็ก 10 ลูก
- รากผักชี 4 ราก ประมาณ 2 ช้อนโต๊ะ
- ขมิ้นสดซอย 1 ช้อนโต๊ะ
- เกลือป่น 1 ช้อนโต๊ะ
- ผงกระหรี่ 1/2 ช้อนโต๊ะ
ส่วนผสมกระเทียมเจียว
- กระเทียมกลีบใหญ่ 3 กลีบ ซอยบาง ๆ
- น้ำมันพืช 4 ช้อนโต๊ะ

Instructions
- Start by roasting on low heat each of the ingredients to prepare the curry paste.
เริ่มทำน้ำพริกเครื่องแกงข้าวซอย โดยคั่ววัตถุดิบที่ละอย่างด้วยไฟอ่อนจนหอม และ ไหม้เล็กน้อย - Roast the deseeded dry chilies until charred and set aside.
คั่วพริกแห้ง และพักเอาไว้ - Roast together the coriander seeds and the black cardamom until fragrant and set aside.
คั่วเม็ดชะโก กับ ลูกผักชีจนหอม และพักเอาไว้ - Roast the ginger juliennes until slightly charred and set aside.
คั่วขิง และพักเอาไว้ - Roast the shallots until charred and set aside.
คั่วหอมแดง และพักเอาไว้ - Roast the coriander roots until charred and set aside.
คั่วรากผักชี และพักเอาไว้ - Roast the fresh turmeric until charred and set aside.
คั่วขมิ้นสด และพักเอาไว้ - Put the charred chilies in a pastel and mortar with a salt
นำเอาพริกแห้งคั่ว ลงโขลกในครกกับเกลือ - Pound the chili roughly.
- Add the roasted coriander seeds and black cardamom, and continue to pound everything together
ใส่ลูกผักชีคั่วกับเม็ดชะโกคั่วลงไป โขลกต่อไป - Add the curry powder
เติมผงกระหรี่ลงไป - Continue to pound all the ingredients to fine powder.
โขลกต่อไปจนละเอียด - Add the rest of the ingredients, the charred shallots, ginger, coriander roots and turmeric.
ใส่หอมแดง ขิง รากผักชี และ ขมิ้น ลงไป - Work everything to a fine and homogenous paste. Set aside.
โขลกรวมกันทั้งหมด จนละเอียด และพักเอาไว้. - In a pot, bring to a boil over medium heat 2 cups of coconut cream with 3 cups of coconut milk ตั้งหม้อไฟกลาง ใส่หัวกะทิ 2 ถ้วย และ หางกะทิ 3 ถ้วยลงไป
- When the coconut starts to crack, add the chicken drumsticks, and cook over medium heat for about 10 minutes.เมื่อกะทิเริ่มเดือดและแตกมันเล็กน้อย ใส่น่องไก่ลงไปต้มประมาณ 10 นาที
- When the coconut cream cracks, oil will float on top, collect about a 3/4 cup of the oils and transfer it to a wok or a pan.
ตักมันกะทิที่แตกให้ได้ประมาณ ¾ ถ้วย และใส่ลงไปในกระทะ - Heat the cracked coconut on a medium heat, and fry the curry paste in it.
ตั้งกระทะด้วยไฟกลาง ใส่น้ำพริกแกงลงไปผัด - Mix constantly until the curry paste is fragrant and thick. This stage is essential because it helps to melt together all the different flavors of the curry ingredient into a complete and round product.
ผัดน้ำพริกแกงจนหอม - Transfer the fried curry paste back to the pot where the chicken is cooking
ตักน้ำพริกผัดที่ได้ ใส่ลงไปในหม้อที่กำลังต้มน่องไก่ - stir well
คนให้เข้ากัน - Lower the heat, cover the pot, and simmer over a low heat for about an hour or until the chicken is tender

ปรุงรสด้วยซีอิ๊วขาว - Season with dark soy sauce
ปรุงรสด้วยซีอิ๊วดำ - When the chicken is tender cooked, add about a cup of coconut cream, and bring to the boil. This last addition will improve the silkiness texture of the dish. Set aside.
เติมหัวกะทิ 1 ถ้วย พักเอาไว้ - In a frying pan, add sliced garlic to cold oil, and over very low heat bring the garlic to a light golden color, remove from the heat. The garlic will keep frying in the residual heat. Set aside.
ใส่กระเทียมลงไปในน้ำมันที่ไม่ร้อน จากนั้นตั้งกระทะด้วยไฟอ่อนจนกระเทียมเริ่มมีสีเหลืองอ่อน ๆ จากนั้นปิดไฟ พักเอาไว้ - Shake and separate the fresh noodles on a working surface.
สรงบะหมี่ 2 ก้อน - Fry one batch of the noodles in hot oil until golden
ทอดบะหมี่ 1 ก้อนในน้ำมันร้อนจนเหลืองกรอบ - Place on paper towel to absorb excess oil. Set aside.
ตักขึ้นให้สะเด็ดน้ำมัน และพักเอาไว้ - Boil the second batch of noodles in hot water for less than a minute, until done.
ลวกบะหมี่ 1 ก้อนในน้ำเดือด - Strain and mix in about a teaspoon of the fried garlic oil. This will prevent the noodles from sticking to each other and creating a lump.
ใส่น้ำมันกระเทียมเจียมลงไปในบะหมี่ เพื่อไม่ให้เส้นบะหมี่ติดกัน - Transfer the noodles into a serving dish, place a chicken thigh next to it and pour over some of the curry soup. Garnish with the deep fried noodles, sour pickled green mustard, slice shallots , lime wedge boiled hard egg and fried and ground chilies.

Sour-Sweet Savory Crispy Rice Vermicelli with Bitter Orange (Mee Krob) (หมี่กรอบส้มซ่าทรงเครื่อง ; Mee Graawp)
mee graawp sohng khreuuang (หมี่กรอบทรงเครื่อง), is an exquisitely regal dish of crispy rice vermicelli. The delicate noodles strands are washed and dried, then fried to a crisp light-golden hue. They retain their brittle crunch and airy texture even after being stir-fried with a clinging sticky sauce that encases the noodles in a thin layer of sheen. This sauce, mixed into the noodles together with other ingredients such as thin slices of pickled garlic and bitter orange peel, impart the dish with a light, fresh sweet and sour, and slightly salty and citrusy glaze.
Khanohm Jeen Naam Yaa (ขนมจีนน้ำยา) – Fermented Rice Noodles with Minced Fish in Aromatic Coconut Curry
In the Central Plains of the Kingdom, fermented rice noodles are inextricably linked to a dish known as naam yaa. Composed of a dense, coconut-based minced fish curry, the dish is infused with layers of salted fish and possesses the distinctive, invigorating and purifying notes of fingerroot. Typically, naam yaa is served with fresh lemon basil as the herb of choice along with an array of side dishes collectively known as meuuat khanohm jeen (เหมือดขนมจีน). These include blanched bean sprouts seasoned with a touch of turmeric for color, fresh lemon basil leaves, thinly sliced three colored chilies, and ground chili for added heat. More elaborate versions will add blanched Chinese bitter gourd slices, batter-fried young morning glory shoots, and fresh shrimp minced and fried with its tomalley in pork lard, as well as crispy-fried shallots as the finishing touch.
Gaaeng raawn (แกงร้อน) is a colloquial Thai term that refers to ‘hot curry’. Today, gaaeng raawn is used to denote soups or curries served with steamed rice. While the precise origin of the term is unclear, gaaeng raawn (แกงร้อน) was deployed in the 1800s for a specific dish – a Siamese soup featuring glass noodles, cooked as either a coconut or a water-based soup with an assortment of dry ingredients revered in Chinese cuisine. The soup’s potential health benefits, combined with its ease of preparation and subtle yet profound flavor, made it a popular choice for entertaining large groups of people, of all ages and backgrounds. The soup is often augmented with fresh proteins: in its more luxurious versions, multiple proteins may be added, including a combination of chicken, pork, shrimp, squid, and crab meat. Thus, over the years, gaaeng raawn (แกงร้อน) was established as a staple source of comfort and warmth for people of all walks of life in Siamese society.

In Thai, the phrase mee naam baan raat thuut refers to a rice vermicelli noodle soup in the style of the Ambassador’s house. The dish was not new when it appeared in the 1956 book Snacks, Tea Nibbles, Hors D’oeuvres and Drinking Food (ตำราอาหารว่าง – เครื่องน้ำชา และ เครื่องเคี้ยว หรือ กับแกล้ม) by Jeeb Bunnag (จีบ บุนนาค), as noodle dishes were often the preferred ingredient for light meals or snacks. In Grandparents Recipes: 100 Years Old Recipes (จานอร่อยจากปู่ย่า สูตรโบราณ 100 ปี), a volume printed in 2014 that highlights recipes from the kitchens of fifteen prominent families, a similar version of the dish is referred to as mee naam baan bpaak naai leert (หมี่น้ำบ้านปาร์คนายเลิศ) and is associated with Nai Lert.
